Roggenbier translates to “Rye Beer”. It is typically 50% Rye malt giving it a characteristic grainy spicy character, which is completed by the classic weizen yeast tartness, spicy clove phenolics and fruity banana esters. With hints of dark stone fruit and caramel flavours it is great Autumn and Winter wheat beer, but due to its medium dry to dry finish it is drinkable all year round.

Yeast is not included in the kit. We recommend using Lalbrew Munich Classic or Mangrove Jack's Bavarian Wheat yeast.

Note on Rye Malt

Rye malt contains a high amount of beta glucan, which increases wort viscosity and may slow runoff during lautering and sparging, and potentially cause a stuck sparge.

A mash rest at 40℃, sometimes called a Beta Glucanase rest, can help to break down the beta glucan in the wort and reduce the risk of a stuck sparge.

As added insurance this recipe includes oat hulls in the mash. The oat hulls do not add any fermentables, but improve the filter bed of the mash to reduce the risk of a stuck sparge.

ATF All Brewery Kits – Brew on Any Setup with Precision Water & Grain Ratios

These recipes have been designed to be brewed on any home brewing setup using a water‑to‑grist ratio of 3 litres per kilogram. Every kit contains a detailed recipe and easy‑to‑follow instructions.

Boil‑Off Rates – Pre‑Calculated for Your Batch Size

The pre‑boil kettle volumes are based on the following boil‑off rates:

  • 3.5 litres per hour for 24 litre batches
  • 4 litres per hour for 48 litre batches

Perfect Your Water Profile & Mash pH with Brewing Salts

To help you achieve the target water profile and optimal mash pH, every kit includes brewing salts. During checkout, simply select your water source from a dropdown menu of known profiles.

  • Your water source not listed? Choose “Not Listed/Not Required”.
  • Have a water analysis report? Select “I will supply a water analysis info” – we’ll adjust the recipe and provide custom brewing salts for your water.

We need these values from your report: Calcium, Magnesium, Sodium, Chloride, Sulphate, alkalinity (as CaCO₃) or bicarbonate level, and pH.

Important Mineral Thresholds for Home Brewers

If any mineral in your brewing water exceeds 50 ppm, or your Sodium level is above 25 ppm, please contact us. We’ll assess whether your water can be adjusted to the target beer profile.

For Brewers Using Other Water Sources

The target water profile is provided so you can calculate your own mineral or acid additions.

Removing Chlorine & Chloramine

If you’re using chlorinated tap water, we strongly recommend an activated carbon filter (such as our Beer & Water Filtering System with a 0.5 Micron Carbon Water Filter) or Campden tablets to remove chlorine and chloramine.
