Coriander seeds are commonly used in distilling gin as part of a botanical mix with juniper, citrus and sometimes liquorice. It can also be used as part of a beer recipe, namely Belgian wits, saisons, and goess in which the coriander seed imparts sharp citrus flavours.
Juniper berries give off fresh, woodsy notes with a subtle fruity citrus flavour and hint of spice. A principle ingredient in gin recipes, they can also be used in beer recipes to impart their flavours and aromas.

Instructions:
• Pour approximately one tenth of the larger botanicals into 2.5 Litres of spirit,
leave to soak for up to 24 hours
• Add the flavoured spirit to the boiler, straining out botanicals and top up
with water
• Add the remaining botanicals into a Pure Distilling Gin Basket and attach
to condenser
• Run distillation, extracting approximately 2.25L @ 40% ABV

The very essence of all gins
Juniper berries form the base of all gin botanical mixes. Use for macerating in spirit or in a suitable gin basket along with your own botanicals to create you own unique botanical mix.
The Still Spirits Air Still Infusion Basket is a stainless-steel basket suitable to infuse your neutral distilled spirit with botanicals such as juniper, lemon, orange peel, cinnamon sticks, chilli or other flavouring ingredients. The basket is easily attached to the underside of the Air Still lid by aligning the indentation on the basket with the nodes on the lid.
The Air Still has a hole under the lid where vapour enters and condenses in the cooling coil before coming out as liquid alcohol. It has come to our attention that a few customers are finding pieces of botanicals stuck within the cooling coil. This may cause unwanted pressure build-up inside of the unit.
To prevent this, when using the Still Spirits Air Still Infusion Basket we suggest:
- Use a muslin cloth, hop bag or tea bag when using small botanical materials such as dried herbs and spices.
- Use plant material that are larger than the hole under the lid i.e. larger than 1cm in diameter.
- We do not recommend turning the top of the Air Still upside down when inserting the basket. Make sure no material falls into the hole.
The Botanical Basket can be used to infuse your spirit with botanical flavours from the Gin Botanicals range or your own ingredients. Simply use one of the Gin Botanicals packets, or your own botanical recipe, add the ingredients in the basket for your own unique brand of spirits!
Simply make your spirit wash as normal, perform the Stripping Run, then during the Spirit Run put your botanical ingredients into the Botanical Basket, screw the basket on to the Pot Still Alembic Dome Top and Pot Still Alembic Condenser, or Turbo 500 Condenser (by removing the saddles) and run your spirit through.
In the Gin Botanicals Kit, you'll receive the Botanical Basket and Gin Botanicals London Dry Gin Style packet.
By simply attaching your Botanical Basket to your Alembic or Turbo 500 setup and adding the Gin Botanicals packet during distillation, you can make this beautiful homemade gin style!
Please note: Use 30 - 35 g of Gin Botanicals when using the Air still and remove saddles first if using a Turbo 500 Condenser.
- Simply make your spirit wash as normal
- Perform the Stripping Run
- During the Spirit Run put your Gin Botanicals packet of ingredients into the Botanical Basket, screw the basket on to the Pot Still Alembic Dome Top and Pot Still Alembic Condenser, or Turbo 500 Condenser (by removing the saddles) and run your spirit through
