ABV Aromazyme is a food-grade enzyme preparation with a strong glycosidase activity that enables biotransformation to occur during fermentation creating a range of potentially bold new primarily fruity flavours. Biotransformation is particularly sought after when brewing NEIPA (hazy) beers.
With a dosage rate of 0.05g/L, this vacuum sealed pouch containing 1.2g of Aromazyme is sufficient to dose 23L - 24L of beer.
For Optimal Results
When using ABV AROMAZYME, the following factors should be considered: Dry-hopping early in fermentation will result in greater extraction of terpene glycosides. Add the enzyme mid-fermentation to allow time for the enzyme to break down glycosides and the actively fermenting yeast to consume the glucose released from the reaction, while minimising volatile loss from CO2 stripping. Avoid adding enzyme after filtration.

Dosage Rate & Application
- The recommended dosage is 5g/hL (0.05g/L).
- ABV AROMAZYME has optimal activity between pH 3.5-6.5, although lower activity is still observed at pH 3.0 for use in sour beers. The optimal temperature range is 15-65ºC.
- Dilute the enzyme in an adequate amount of water (~ 1g in 10ml) to ensure even distribution within the fermenter.

Originating from the USDA-ARA breeding program, Cascade is an aroma-type cultivar bred in 1956 and released in 1972. It was developed by open pollination of a Fuggle seedling. Cascade is the most popular variety in craft brewing and is known for having a unique floral, spicy and citrus character with balanced bittering potential.

Centennial has become one of the most well-respected hop varieties since being released in 1990. Centennial, named after the centennial anniversary of Washington state, is incredibly well-rounded and useful for bittering, flavour, aroma, and dry-hopping. It quickly developed the nickname Super Cascade for its vibrant citrus and soft pine characteristics. Centennial is the featured hop in legendary IPAs such as Russian River's Pliny the Elder, Founders' Centennial IPA, and Bell's Two Hearted Ale.
It is well suited to Pale Ales and IPAs.

Developed by the USDA breeding program in Washington State and released in 1985 as a high alpha bittering variety, Chinook is a cross between Petham Golding and a USDA male. In recent years, it has found favour as a dual purpose hop in the craft brewing community as a result of its spice and pine aroma characteristics.
It works well at any stage of the boil and in the dry hop and works particularly well in American Pale Ales (APA) and IPA's, but can be used in many styles.
Chinook feature in Stone’s Arrogant Bastard and in addition to Cascade and Centennial in Sierra Nevada’s Celebration Ale – a beer famous for its piney, citrusy character.

Breeding:
Released from the New Zealand DSIR (now New Zealand's Plant & Food Research) in 1972. Green Bullet is a triploid alpha variety that was bred by open cross pollination of the New Zealand "Smoothcone" variety. The era was one where alpha potential was rapidly being recognised by brewers and the New Zealand alpha varieties were certainly pushing the boundaries.
Selection:
Selection can be confusing with New Zealand bitter types due to aromatic qualities not usually associated with alpha varieties. The Green Bullet, albeit quite high in alpha, also produces high levels of floral oil that complement and balance the piny resinous hop character.
Brewing:
Green Bullet delivers a traditional bittering quality and hop flavour. A flagship within the New Zealand brewing industry and considered a bittering variety for lager it is more often found these days in big ale styles. Green Bullet also carries a solid Styrian spicy characteristic which also finds it at home in a freshly drawn pint of bitter or an Irish style dry stout.
'A brewery workhorse'
Applications:
Used extensively as a utility Brew house workhorse and found in breweries across the World . This "go to" hop is a traditional bittering type that now finds applications throughout the brewery from late additions through the hopback/ whirlpool and dry hopping.
The signature landrace variety of the Hallertau region in Bavaria, Hallertau Mittelfrüh is, at least to some, the epitome of noble hops.
Complex, but mild and approachable. A mixture of sweet, earthy, and herbal with vivid impressions of new-mown hay, sweet spices, and dried flowers. It's many offshoots and daughters show some of these same qualities, but none have the same range and balance as Mittelfrüh.
Although it can be and is used throughout the boil, it is most prized for its fine, elegant aroma and flavour contribution. Mittelfrüh has been one of Europe’s most widely esteemed varieties for centuries and is practically synonymous with continental lagers (particularly Bavarian styles) and many types of German and Belgian ales.
Idaho 7 presents as pungent, tropical fruit and citrus (think apricot, orange, red grapefruit, papaya) with big notes of resiny pine and hints of black tea. Excellent as a single hop or part of a blend for IPA, pale ale, and other hop forward beers.

Kohatu® has been described as having an intense fresh tropical fruit character during selections and these early sensory evaluations brought this hop to the attention of researchers.
Brewing:
Initial brewing trials displayed a hop of great versatility with excellent stable flavour and aroma impacts. Fruity characters seen in sensory selections had carried through into the finished product, which was very satisfying. Importantly, the real stand out has been the consistency and quality of bitterness in dual purpose applications.

A dual purpose / bittering hop with classic resinous pine and lifted citrus characters
Breeding:
Dr Rudi is a triploid variety that was bred from the New Zealand Smoothcone variety cross open pollinated at the New Zealand Horticultural Research Centre and released in 1976 as Super Alpha. Officially changed to Dr Rudi in 2012.
Selection:
Widely selected for its dual-purpose ability, Dr Rudi was once a high alpha type. Selectors note a fresh citrus peel beneath a mix of aromas such as pine needles and lemongrass when used as a late addition become evident in the aroma top notes.
Brewing:
A very versatile hop in the brew house where it can be used to deliver a quality crisp bitterness as well as excellent aroma qualities. Typical of New Zealand varieties, the oil profile sets it apart as a hop with many applications and can now be found in breweries throughout international markets where it is sought for its ability to integrate and finely balance both Ales and Lagers.

Applications:
Works well where resinous, citrus and pine characters are required to build and develop an excellent finishing bitterness. Especially good as a dual purpose variety in single hopped beers as well as with multiple aroma varieties to create first rate new-world beer styles.
