Brought back from obscurity by Pierre Celis at the Hoegaarden brewery, Witbier is a great refreshing beer. With plenty of un-malted wheat along with a portion of oats, Witbier is typically cloudy with a soft grainy sweetness. Belgian Wit Yeast adds subtle banana fruitiness and clove notes, which are enhanced through the addition of coriander seeds and fresh orange yeast.
In addition to what is included in the kit you will need 12g of coriander seed and 45g of orange zest (or the zest of your favourite citrus fruit).
Yeast is not included in the kit. We recommend using Froth Unicorn (Assumed Origin: Hoegaarden), or you could use Lallemand Lalbrew Wit or Mangrove Jack's Belgian Wit Yeast.
The ATF Smooth Hoperator is a beer colloquially called a Session IPA. Full of citrus and tropical fruits, with a subtle floral character on a light caramel malt base, it is a very drinkable lower ABV beer that is one smooth hoperator.

This recipe employs whirlpool hopping at a set temperature of 65℃ for 60 minutes. If you are unable to maintain a 65℃ whirlpool for 60 minutes you may wish to try the hop burst version.

Base Malt
Lager Light Malt has been subjected to a gentler kilning cycle so that a lower coloured base malt is produced. This malt is made especially for brewing an all malt lager where a light colour is desirable. This base malt can also be used alongside Gladfield Wheat Malt to brew a delicate, bright, clean malt profile wheat beer where a low colour formation is desired.
Use: A base malt for any style of beer. This malt is light in colour, with a sweet, clean flavour.

ATF Kvazy is a Kveik Hazy thats a little bit crazy.
Utilising the phenomenal Voss Kveik, ATF Kvazy can be ready to drink in just 7 days, but it will be at its best after another week or two of cold conditioning.
Dry hopped with 330g of hops, the ATF Kvazy is bursting with tropical fruit with an underlying citrus character and a full juicy mouthfeel. The ATF Kvazy is bound to become a favourite.

The ATF Fullers 1845 Clone aims to replicate the strong, rich and fruity ale, that was specially commissioned to celebrate 150 years of the Fuller, Smith and Turner partnership. For best results this beer should be bottle conditioned for 100 days. Bottle conditioning should take place in a cool dark environment.
Fullers Brewers Notes
Best poured slowly, 1845 delivers a sweet, fruit cake aroma, a dark tawny colour and a dry finish that sings of spices and raisin. Those fruity characteristics harmonise perfectly with the biscuity malts amid a clever and complex range of subtle flavours, the depth of which you could only find in a live beer fermented in the bottle.
Yeast is not included in the kit. We recommend using Mangrove Jack's Liberty Bell or you could also try Fermentis SafAle S-04.
If crash cooling it is possible to cause the yeast thermal shock, which may be an issue when bottle conditioning, particularly a higher alcohol beer.
With the aroma of sweet crema brewed from freshly roasted coffee on top of subtle chocolate and nutty dark fruit caramel flavours, the ATF Velveteen Stout is a revelation.
Unlike a traditional dry stout, the ATF Velveteen Stout has no acrid bitterness or astringency from the use of large amounts of traditional dark malts.
It has a full malt backbone and a creamy velvety mouthful with sufficient hop bitterness to ensure it isn’t too sweet and leave you wanting more.

This is our interpretation of Emerson’s Bookbinder. In Emerson’s own words Bookbinder is:
A wonderfully drinkable interpretation of a classic English ale. Bookbinder is a blend of four malts combined with two classic Nelson grown European hops (Fuggles and Riwaka). The beer pours an attractive reddish brown, with a cream coloured head. Bookbinder has a sweet, perfumey, malt and hop aroma with a soft, malty, fruit and vinous palate that is both full flavoured and refreshing with a long, gently drying finish.
Yeast is not included in the kit. We recommend using Froth Vape (Assumed Origin: Boddington’s),the yeast currently by Emerson's to produce Bookbinder. Alternatively we recommend using Lallemand Verdant IPA, or you could also try Fermentis S-04 or Mangrove Jack's Liberty Bell.
As the name suggests, this beer is an Anzac biscuit in liquid form. It has pleasant biscuity and silky oat character with the pleasing sweetness reminiscent of golden syrup. With toasted coconut in the background and an underlying rich dark fruit character this is great Autumn beer.

The ATF Jolly Monk is a strong blonde, slightly gold beer with a malty aroma and a creamy mouthfeel. It has a delicate sweet malty taste with a moderate bitterness and a fantastic complex marriage of spice, fruity esters, phenolics and alcohol.
Yeast is not included in the kit. We recommend using Mangrove Jack's Belgian Tripel yeast or you could also try Fermentis SafAle BE-256 or Lallemand Abbaye.

The ATF Belgian Saison is a refreshingly golden coloured ale that is wonderfully fruity and spicy. Often bottle conditioned and highly carbonated it is a great summer beer.

Alternatively you could use Froth Wilding to create a unique New Zealand Saison.

A soft bittering / dual purpose hop with fresh citrus and complex spice characters
Breeding:
NZ Pacific Jade Brand HORT1524 is a triploid alpha type developed by the cross of the NZ variety "First Choice" (a relative of the Late Cluster) and an Old Line Saazer Male. Released from the New Zealand Hop Research Programme by HortReasearch Centre Riwaka in 2004.
Selection:
Selected on its average alpha of 12-14% with Cohumulone in the region of 24% and an excellent oils profile. The aroma of this hop is described as bold as it delivers a herbal infusion of fresh citrus and crushed black pepper.
Brewing:
Suited for use as a bittering hop with some excellent results also being seen in dual purpose applications, with a soft bitterness attributable to the low cohumulone. The citrus aroma and flavour notes work well to temper malt sweetness in fullish Ales especially as a finishing hop.

Applications:
Typically to replace less interesting Alpha varieties where a softer bitterness and higher oil profile is desired. NZ Pacific Jade exemplifies current market direction and what is being achieved in the New Zealand Hops breeding programme.

Based on an English Mild Ale, the ATF Lilliputian Ale is a low ABV beer with a warm nutty malt base. It has layers of gentle dark caramel sweetness with hints of caramelised fruit and toasted toffee, blended beautifully with a smooth roast character with hints of dark chocolate. The English yeast provides a pleasant light fruitiness and slight tartness.
Unlike its English grandparent it also has a pleasant mild citrus character along with the more traditional earthy spicy character.

First Pour Foam Reduction
The reduction in thermal mass significantly reduces the first pour foam effect. The tap is often the warmest part of the draft system as it protrudes from the font/tower/fridge. As a result, it acts like a heat sink and only works well once enough cold beer flows through it to cool the tap body down. This reduction of thermal mass significantly improves the foam that is poured while the tap is cooling down.
Laminar Flow
The Nukashuttle design is the world’s first seamless shuttle. After many months of modelling and testing this new "Nuke" shaped shuttle design has the most fluid dynamic shuttle shape ever manufactured for a forward sealing tap. The streamline "nuke/missile" shape is how this new innovation earned its name "Nukatap". This leap forward in laminar flow means even highly carbonated beers pour like a dream with minimal turbulence and giving you the perfect pour every time.
Most Sanitary Design
The Nukashuttle is the world’s first seamless single-piece design. Traditional taps have a seal that is seated on a stainless-steel body creating small fissures that harbour solids, are potential sites for infection, and are not as ideal for clean in place (CIP). The Nukashuttle is an advanced TPV rubber matrix that been seamlessly formed over a durable PP skeleton. This single-piece design takes away the traditional fissures found in older manufacturing methods.
Long Life Seals
Unlike many other taps that use rubbers that can be degraded with caustic and acid compounds, the Nukatap has been made to suit a wide range of conditions. It's becoming more common to see sour beers/kombucha and other acetic and lactic acid beverages dispensed using draft systems. These acids, in particular, could cause an attack on the sealing compounds resulting in downtime, loss of product and reduced maintenance intervals. The Nukatap solves this problem and is the most chemically resistant tap we have ever manufactured. Unlike some older tap styles that have "metal on metal" rubbing components that can wear over time and have a "raspy feel" the Nukatap has been manufactured with a smooth gliding action that guarantees the longevity of the tap components. The TPV rubber matrix shuttle is also one of the most durable sealing mechanisms that can tolerate large amounts of leverage force from long tap handles that would otherwise traditionally degrade the seals in other tap designs.
Other forward sealing designs exist but nothing with the same level of reliability. It’s easy to find other “perl” forward sealing design taps however these taps use a floating o-ring design which by all means is equally as sanitary however the floating o-ring requires the o-ring to move within the tap body to seal correctly. This movement is typically a problem as the tap ages and/or is not serviced regularly. The Nukatap bypasses this seal as the entire Nukashuttle is a single sealing piece.
Tap Handle Angle - 2.5 degree Reverse Angle
The Nukataps have been manufactured with a 2.5 degree reverse angle. This allows for a wider range of taps handles to be used, in particular, long and/or heavy handles to work perfectly irrespective of the installation conditions.
Forward Sealing Design
Just like the Intertap and its predecessors, the Nukatap shuts off the flow at the front of the tap which in turn keeps wild yeast and bacteria out of the interior of the tap body.
What does Rear Sealing Design Mean?
Typically most beer taps use a rear sealing design and the beer in the tap drains from the body of the tap with the help from a vent hole drilled at the front of the tap. This drainage hole is a dark and wet cavity and is an ideal place for airborne bacteria and wild yeast to reproduce leaving a foul film that deteriorates the quality of your beer. Every time the faucet is opened contamination can occur.
