The ATF Fullers 1845 Clone aims to replicate the strong, rich and fruity ale, that was specially commissioned to celebrate 150 years of the Fuller, Smith and Turner partnership. For best results this beer should be bottle conditioned for 100 days. Bottle conditioning should take place in a cool dark environment.

Best poured slowly, 1845 delivers a sweet, fruit cake aroma, a dark tawny colour and a dry finish that sings of spices and raisin. Those fruity characteristics harmonise perfectly with the biscuity malts amid a clever and complex range of subtle flavours, the depth of which you could only find in a live beer fermented in the bottle.
Yeast is not included in the kit. We recommend using Mangrove Jack's Liberty Bell or you could also try Fermentis SafAle S-04.
If crash cooling it is possible to cause the yeast thermal shock, which may be an issue when bottle conditioning, particularly a higher alcohol beer.
Biére de Garde (beer for keeping) is a traditional malt oriented farmhouse ale from Northern France that was typically brewed in early winter then cellared (lagered) until spring and summer when it was then consumed.
The ATF D’or Biére de Garde is a golden coloured beer with a malty sweet aroma and a creamy honey like mouthfeel. A complex beer that is spicy, fruity, and peppery, with a dry finish and slight acidity making it very drinkable. The beer will benefit from a period of lagering.
Yeast is not included in the kit. We recommend using Mangrove Jack's French Saison yeast or SafAle BE-134.
Te Aro Brewing Dragon APA is described as having a slightly sweet aroma with citrus and herbal pine flavours from Mosaic and Falconer’s Flight hops. The use of Gladfield’s American Ale, Wheat and Medium Crystal malts provide an excellent base for a medium bodied and quaffable APA.
Yeast is not included in the kit. We recommend using Froth Buddy (Assumed Origin: Sierra Nevada), or Lallemand's BRY-97 West Coast Ale Yeast. You could also try Safale US-05, Lallemand Nottingham High Performance Ale Yeast, or Mangrove Jack's West Coast Yeast.

Yeast is not included in the kit. We recommend using Mangrove Jack's Belgian Ale or you could also try Fermentis SafAle BE-256.

Full of luscious citrus and tropical fruit with a top note of pink grapefruit, the ATF Cosmic Jukebox will send your tastebuds into the stratosphere. Hopped at 6.25g/L in the whirlpool and dry hopped at a little over 20g/L, the ATF Cosmic Juicebox is a hop lovers dream.
Yeast is not included in the kit. We recommend using Froth Vape (Assumed Origin: Boddington’s) to produce a juicy hazy with a silky mouthfeel and great hop aroma and flavour.
Alternatively we recommend using Verdant IPA. Lallemand’s Verdant IPA yeast. LalBrew Verdant IPA yeast will produce fruity esters and is well suited to NEIPA’s. Verdant IPA yeast expresses high amounts of β-lyase enzyme promoting biotransformation accentuating hop flavour and aroma. and also produces high amounts of glycerol producing a beer with a silky mouthfeel.
You could also try Froth Spectra (Assumed Origin: Unknown (London)).Spectra can produce a spectrum of radiant flavour & aroma while exhibiting an elegant ester profile and velvety mouthfeel.
Alternatively you could use Lallemand's New England yeast. Lallemand New England produces beers with a unique fruit forward ester profile, which is sought after in NEIPA's. Through expression of a β-glucosidase enzyme, LalBrew® New England can promote hop biotransformation and accentuate hop flavour and aroma.
Please Note: Kettle finings are not provided with this kit as beer clarity is not required for this style of beer.
IPA Bitter is a light, delicately balanced beer. Originally brewed for consumption in India, it is an ideal thirst-quencher.

This Classic West Coast IPA kit comes complete with American ale yeast. It has a fresh, clean mouthfeel from hopped ale malts.
For a West Coast IPA we recommend you add 1.5kg Brick Road Light malt extract plus 1kg Brick Road Extra Light Dry malt extract (OR 1kg dextrose). For the citrus, fruity aroma and flavour of an American West Coast IPA, add at least 30g (up to 200g) of American hops like Centennial, Cascade, Citra or Amarillo. For more piney notes add Columbus. For a NZ IPA use Riwaka, Nelson Sauvin or Motueka.

The ATF Schwarzbier (black beer) is a light bodied lager beer with a mild roast character. An easy drinking beer with aromas of chocolate of coffee blending with a light noble hop aroma.

It is typically 50% Rye malt giving it a characteristic grainy spicy character, which is completed by the classic weizen yeast tartness, spicy clove phenolics and fruity banana esters. With hints of dark stone fruit and caramel flavours it is great Autumn and Winter wheat beer, but due to its medium dry to dry finish it is drinkable all year round.
Yeast is not included in the kit. We recommend using Lalbrew Munich Classic or Mangrove Jack's Bavarian Wheat yeast.
Note on Rye Malt
Rye malt contains a high amount of beta glucan, which increases wort viscosity and may slow runoff during lautering and sparging, and potentially cause a stuck sparge.
A mash rest at 40℃, sometimes called a Beta Glucanase rest, can help to break down the beta glucan in the wort and reduce the risk of a stuck sparge.
As added insurance this recipe includes oat hulls in the mash. The oat hulls do not add any fermentables, but improve the filter bed of the mash to reduce the risk of a stuck sparge.
Brought back from obscurity by Pierre Celis at the Hoegaarden brewery, Witbier is a great refreshing beer. With plenty of un-malted wheat along with a portion of oats, Witbier is typically cloudy with a soft grainy sweetness. Belgian Wit Yeast adds subtle banana fruitiness and clove notes, which are enhanced through the addition of coriander seeds and fresh orange yeast.
In addition to what is included in the kit you will need 12g of coriander seed and 45g of orange zest (or the zest of your favourite citrus fruit).
Yeast is not included in the kit. We recommend using Froth Unicorn (Assumed Origin: Hoegaarden), or you could use Lallemand Lalbrew Wit or Mangrove Jack's Belgian Wit Yeast.

Munich Dunkel is a malt oriented German dark lager. It is a rich complex beer with flavours of warm toasty bread crust and rich caramel and toffee. Despite the malt forward flavour, Munich Dunkel has a dry finish and does not come across as overly sweet making it a very sessionable beer.
Traditionally Munich Dunkel would have been made using a decoction mash to encourage the Maillard reactions that help give the beer its rich malty flavours. The ATF Munich Dunkel uses a small amount of Aurora Malt to help provide the maltiness typical of the style.
