Te Aro Brewing Dragon APA is described as having a slightly sweet aroma with citrus and herbal pine flavours from Mosaic and Falconer’s Flight hops. The use of Gladfield’s American Ale, Wheat and Medium Crystal malts provide an excellent base for a medium bodied and quaffable APA.
Yeast is not included in the kit. We recommend using Froth Buddy (Assumed Origin: Sierra Nevada), or Lallemand's BRY-97 West Coast Ale Yeast. You could also try Safale US-05, Lallemand Nottingham High Performance Ale Yeast, or Mangrove Jack's West Coast Yeast.
As the name suggests, this beer is an Anzac biscuit in liquid form. It has pleasant biscuity and silky oat character with the pleasing sweetness reminiscent of golden syrup. With toasted coconut in the background and an underlying rich dark fruit character this is great Autumn beer.
Yeast is not included in the kit. We recommend using Froth Rudeboy (Assumed Origin: Youngs Brewery) or Mangrove Jack's Empire Ale yeast. You could also try Mangrove Jack's Liberty Bell yeast.
In addition to the ingredients included in the kit you will also require 75g of toasted coconut flakes and 100g of treacle.
The ATF Kiwi Pilsner has a clean soft malty sweetness with hints of sweet hay balanced by a firm bitterness. Unlike its Bohemian grandparent it showcases the unique qualities of New Zealand hops with aromas of orange citrus and passionfruit up front with tropical fruit, lemon, lime, and stone fruit being a strong supporting act.
Yeast is not included in the kit. If fermenting cold we recommend using SafLager SH-45. The ideal Lager yeast to enhance hop thiol release result, crafting beers with enhanced levels of fruitiness and intensified citrus and tropical notes
Alternatively we recommend using Fermentis SafLager W-34/70 or Lallemand Diamond Lager Yeast.
If fermenting warm we recommend using: SafLager SH-45 (up to 18℃). Alternatively we recommend using Fermentis SafLager W-34/70 or Mangrove Jack's Californian Lager Yeast.

Brick Road Hopped Light Malt makes great-tasting beer with your favourite yeast and Brick Road unhopped Malt extract cans (or Brick Road Dry Malt Extract, or dextrose). You can also use it in all-grain recipes when you want only the finest hopped malt flavour.
This can will contribute a light-gold colour up to 8 EBC and low-med. bitterness of 17 IBU in 23L, and 1.021 gravity points. It will replace approx. 1.75 kg of light base grain and bittering hops in your wort. Hopped Light Malt is particularly good for IPA’s and Pale Ales.
The ATF German Pils is a clean and crisp light bodied beer with a pleasant mild grainy malt sweetness superbly balanced with a refreshing bitterness and dry finish. Hallertau Mittlefruh hops provide a classic noble hop aroma with notes of fresh hay, sweet spices, and dried flowers.
The ATF Schwarzbier (black beer) is a light bodied lager beer with a mild roast character. An easy drinking beer with aromas of chocolate of coffee blending with a light noble hop aroma.

This Craft Red IPA will satisfy your tastebuds. Brick Road Craft Columbus Red IPA malt is already hopped to the perfect bitterness level for this malty, hoppy IPA, and comes with 30g of Columbus for dry-hopping. Use the yeast under the lid and add an extra packet of S-04. Mix with 1.5kg of Muntons Maris Otter liquid malt and dry hop with the 30g of Columbus under the lid plus 30g Simcoe, 30g Mosaic and 30g Citra. Top to 19L for approx. 5.8% ABV.

Instructions

Clean and sanitise fermenter, spoon, cup and jug.

Soften the malt cans in hot water for about 5 minutes.

Pour 2 litres of boiling water into your 5L jug. Open the cans and pour the contents into the jug.

Mix the concentrated wort and water well, then pour into your fermenter. Top up with cold quality brewing water to 19L. Ensure the wort temperature is 18℃-22℃. Vigorously stir the wort with a large spoon to oxygenate it. Sprinkle the yeast over the wort.

Seal the fermenter lid and insert airlock. Ideally ferment at 18℃-22℃ for 10 - 14 days.

On Day 5 of Fermentation, add the dry hops.

After 10 days, check the gravity. If the SG remains steady for three days, fermentation is complete. If in doubt, leave a few more days for better results. Keg or bottle your brew.
This Classic West Coast IPA kit comes complete with American ale yeast. It has a fresh, clean mouthfeel from hopped ale malts.
For a West Coast IPA we recommend you add 1.5kg Brick Road Light malt extract plus 1kg Brick Road Extra Light Dry malt extract (OR 1kg dextrose). For the citrus, fruity aroma and flavour of an American West Coast IPA, add at least 30g (up to 200g) of American hops like Centennial, Cascade, Citra or Amarillo. For more piney notes add Columbus. For a NZ IPA use Riwaka, Nelson Sauvin or Motueka.

In Lallemand’s Standard Conditions 12°P Wort at 20°C (68°F), LalBrew Pomona™ yeast exhibits:

Brought back from obscurity by Pierre Celis at the Hoegaarden brewery, Witbier is a great refreshing beer. With plenty of un-malted wheat along with a portion of oats, Witbier is typically cloudy with a soft grainy sweetness. Belgian Wit Yeast adds subtle banana fruitiness and clove notes, which are enhanced through the addition of coriander seeds and fresh orange yeast.
In addition to what is included in the kit you will need 12g of coriander seed and 45g of orange zest (or the zest of your favourite citrus fruit).
Yeast is not included in the kit. We recommend using Froth Unicorn (Assumed Origin: Hoegaarden), or you could use Lallemand Lalbrew Wit or Mangrove Jack's Belgian Wit Yeast.

On Day 3 of fermentation, add half the hops. Ideally add inside a hop bag and remove after 48 hours. Repeat with the remaining hops on Day 5.

Roggenbier translates to “Rye Beer”. It is typically 50% Rye malt giving it a characteristic grainy spicy character, which is completed by the classic weizen yeast tartness, spicy clove phenolics and fruity banana esters. With hints of dark stone fruit and caramel flavours it is great Autumn and Winter wheat beer, but due to its medium dry to dry finish it is drinkable all year round.
Yeast is not included in the kit. We recommend using Lalbrew Munich Classic or Mangrove Jack's Bavarian Wheat yeast.
Note on Rye Malt
Rye malt contains a high amount of beta glucan, which increases wort viscosity and may slow runoff during lautering and sparging, and potentially cause a stuck sparge.
A mash rest at 40℃, sometimes called a Beta Glucanase rest, can help to break down the beta glucan in the wort and reduce the risk of a stuck sparge.
As added insurance this recipe includes oat hulls in the mash. The oat hulls do not add any fermentables, but improve the filter bed of the mash to reduce the risk of a stuck sparge.
