Unlike a traditional dry stout, the ATF Velveteen Stout has no acrid bitterness or astringency from the use of large amounts of traditional dark malts.

American Pale Ales are a refreshing hoppy beer with sufficient malt base to make the beer balanced and drinkable.
The ATF Citra Pale Ale delivers a beer that is hard to resist. Loaded with Citra hops, the beer has brash citrus, grapefruit, and orange flavours and aromas, with hints of resinous pine. The clean light malty base with a background of nutty toasted caramel balances the hops perfectly. The beer finishes dry and will have you reaching for more.

The ATF German Wheat Beer (Weissbier) is a pale and refreshing traditional style German wheat beer. It has a fluffy bready mouthfeel with a dry finish, but what really sets apart is the distinctive banana and clove character imparted by the yeast.
It should pour a pale straw colour, relatively cloudy (although this may clear after a long period of cold conditioning), with a rich and creamy long lasting head.
A great summer beer that pairs well with seafood.

Roggenbier translates to “Rye Beer”. It is typically 50% Rye malt giving it a characteristic grainy spicy character, which is completed by the classic weizen yeast tartness, spicy clove phenolics and fruity banana esters. With hints of dark stone fruit and caramel flavours it is great Autumn and Winter wheat beer, but due to its medium dry to dry finish it is drinkable all year round.
Yeast is not included in the kit. We recommend using Lalbrew Munich Classic or Mangrove Jack's Bavarian Wheat yeast.
Note on Rye Malt
Rye malt contains a high amount of beta glucan, which increases wort viscosity and may slow runoff during lautering and sparging, and potentially cause a stuck sparge.
A mash rest at 40℃, sometimes called a Beta Glucanase rest, can help to break down the beta glucan in the wort and reduce the risk of a stuck sparge.
As added insurance this recipe includes oat hulls in the mash. The oat hulls do not add any fermentables, but improve the filter bed of the mash to reduce the risk of a stuck sparge.
The ATF Tangy Fruit is a great refreshing beer bursting with tangy citrus and tropical fruit aromas.
Like wine, this beer uses acidity to balance the malt sweetness instead of bitterness. The acidity has a pleasant citrus quality very similar to fresh lemons/lemonade, which provides the beer with a light body making it refreshing and very drinkable.
The ATF Tangy Fruit's acidity is provided by WildBrew Philly Sour yeast, a unique yeast that primarily produces lactic acid during the initial phase of fermentation before switching over to ethanol production.
Philly Sour takes longer than most yeasts to begin and complete fermentation so it is important to pitch the right amount of yeast. Yeast is not included in the kit.
Sub-Base Malt
Our Rye Malt is produced from locally grown rye corn. Rye does not have an outer husk so it benefits from a finer mill setting than our malted barleys. The rye is malted with the same care as our other malts and modifies beautifully in the kiln.
Use: Gives colour, spicy flavours and a clean, dry mouth feel.
Rate: Recommend starting with 10%, can then be increased up to 50% for more rye flavour.

The ATF Czech Pale Lager is the Bohemian Pilsners little brother. A lighter-bodied, refreshing, hoppy, bitter pale lager.
Bready malt on the nose with earthy floral notes from the Saaz hops. Light and crisp in the mouth with a light bready maltiness balanced by a firm bitterness and drying finish.
Yeast is not included in the kit. If fermenting cold we recommend using Froth Vagabond (Assumed Origin: Budêjovický Budvar) or:
- Mangrove Jack's Bohemian Lager yeast or
- Fermentis SafLager W-34/70 or
- Lallemand Diamond Lager Yeast
If fermenting warm we recommend using Fermentis SafLager W-34/70 or Mangrove Jack’s Californian Lager.

Note on Water Profile
The recommended water profile for this beer is very soft with no more than 7ppm of any mineral.
The beer may be brewed using other water sources, but may not have the same soft delicate mouthfeel and bitterness. Rainwater, reverse osmosis water, or bottled spring water is ideal.

Built on a soft malt base to create a balanced and smooth profile that complements the hop-forward nature of the beer beautifully. The result is a well-rounded experience where the hops take centre stage, while the malt backbone provides a gentle supporting role.
Yeast is not included in the kit. We recommend using Froth Vape (Assumed Origin: Boddington’s) to produce a juicy hazy with a silky mouthfeel and great hop aroma and flavour.
Alternatively we recommend using Verdant IPA. Lallemand’s Verdant IPA yeast. LalBrew Verdant IPA yeast will produce fruity esters and is well suited to NEIPA’s. Verdant IPA yeast expresses high amounts of β-lyase enzyme promoting biotransformation accentuating hop flavour and aroma. and also produces high amounts of glycerol producing a beer with a silky mouthfeel.
You could also try Froth Spectra (Assumed Origin: Unknown (London)).Spectra can produce a spectrum of radiant flavour & aroma while exhibiting an elegant ester profile and velvety mouthfeel.
Alternatively you could use Lallemand's New England yeast. Lallemand New England produces beers with a unique fruit forward ester profile, which is sought after in NEIPA's. Through expression of a β-glucosidase enzyme, LalBrew® New England can promote hop biotransformation and accentuate hop flavour and aroma.
Please Note: Kettle finings are not provided with this kit as beer clarity is not required for this style of beer.
The ATF Classic NZ Lager is a clean and crisp light bodied beer infused with the flavour of the unique Green Bullet Hops, the workhorse of traditional New Zealand breweries.
With a spicy fresh green grass aroma and clean crisp mouthfeel with a firm bitterness and dry finish, the ATF Classic NZ Lager is the Kiwi summer beer of yesteryear.
Yeast is not included in the kit. We recommend using Fermentis Saflager S-189 if fermenting cold.
If you are unable to perform a cold fermentation you can ferment warm (20℃) using Mangrove Jack's Californian Lager yeast, Fermentis SafLager W-34/70, or Lallemand NovaLager yeast.

LalBrew NovaLager™ is a robust lager strain with ideal characteristics for lager beer production including fast fermentations and high attenuation. The distinct flavour profile is very clean with slight esters over a wide temperature range.
The optimal temperature range for LalBrew NovaLager™ yeast when producing traditional styles is 10 – 20°C.

Sub-Base Malt
Big O - Malted oats are a great addition to use instead of a rolled or flaked product. Whole oats are fully modified and kilned to give a rich oat, nutty flavour. Big O -Malted Oats have a few great attributes that make a preferred product for Stouts and Hazy IPAs: They have a large, thick husk which greatly aids in sparging and run-off. They have much more flavour – kilned to enhance the nutty, oaty flavours and bring more to the table than a flaked product. They bring the same silky smoothness to a beer that a rolled oat will. Big O provides a better haze than rolled oats alone in your hazy IPAs. Some brewing notes: The oats and husk will absorb more water so be prepared to increase the amount of your strike water. Mix the oats with the barley during milling to help deliver an even crush.

Harraways Jumbo Oats are a versatile adjunct. These wholegrain oats have been rolled into flakes that can then be added directly to the mash with base and speciality malts. Rolled oats provide a creaminess and smooth silky mouthfeel. They are commonly used in hazy's, porters, and stouts, and are also effective for adding body to low alcohol beers.
The ATF NZ IPA is a vibrant and distinctive beer that showcases the punchy flavours of Nectaron, Riwaka, and Taiheke, delivering a burst of tropical pineapple and passionfruit along with a range of citrus fruits, with notes stone fruit peaking through.
