Wai-iti™ Brand HORT7709 is a new hop variety developed by New Zealand Plant and Food Research with release from the New Zealand Hop breeding Programme in 2011. It was selected for its low alpha acid and high oils content. Wai-iti™ is a granddaughter of the USDA developed Liberty, and is a triploid hop derived from 1/3rd Hallertau Mittelfrüeh.
Selection:
Selectors comment on the intensity of the aromas, attributable for the most part to the high weight of oil and oils to alpha ratio. Freshly squeezed limes with top notes of mixed citrus are the standouts in a heady blend of essential oils.
Brewing:
Citrus characters apparent in selection step back a little in the finished product to make way for a blend of stone fruits such as fresh peaches and ripe apricot. Low cohumulone and high levels of farnesene create a rounded clean bitterness when used in single hopped beers. The high oil content fills in all the corners when used in late additions, the hop back or in dry hopping.

Breeding:
Nelson Sauvin Brand 85-03-06 is a triploid variety bred from the New Zealand variety Smoothcone and a selected New Zealand male. Developed by New Zealand's Plant & Food Research and released in 2000, the essential oil profile displays characteristics of fresh crushed gooseberries a descriptor often used for the grape variety Sauvignon Blanc, giving rise to this variety's name.
Selection:
Described during selection as breathtaking Nelson Sauvin has the unique ability to impart a distinctive cool climate white wine fruitiness. The complexity of the oils profile has seen selectors stretched looking for descriptors to document this unique new world variety.
Brewing:
A hop that may require judicious application in the brew house, this truly unique dual-purpose variety can be used to produce big punchy Ales as well as subtle aroma driven Lagers. The fruitiness may be a little overpowering for the un-initiated, however those with a penchant for bold hop character will find several applications for this true brewer's hop.

Very much at home in the new-world styles such as American Pale Ale and IPAs. This hop is considered by some as being extreme and it certainly makes it presence felt in speciality craft and seasonal beers while having gained a considerable international reputation in recent times.

Beautiful in a porter or oatmeal stout where the coffee spice character is particularly well matched with the roast malts. Adds a further level of complexity to Vienna Malt in a Dunkel, or even something a little uncommon to a mild or English brown.

This all-in-one can contains our exceptional hopped wort—the foundation of your great beer. Just follow these steps for an authentic, refreshing Cerveza:

Mix & Make it Your Own: Empty the contents of the can into your fermenter. Add about 3 litres of hot water and stir thoroughly to dissolve the concentrated wort. Then, add your 1kg of brewing sugar (dextrose) and stir again until fully dissolved. Finally, top up the fermenter with cold water to reach the 23-litre mark.

Pitch & Ferment: Sprinkle in the included New World Lager Yeast. Seal your fermenter and place it in a stable, room-temperature environment (this versatile hybrid yeast can be fermented at up to 22°C). The active fermentation will typically be complete within 3 to 7 days. You'll know it's slowing down when the vigorous bubbling in the airlock subsides.

Dry Hop (Optional) & Condition:
If you are dry-hopping, this is the time to do it. Just as the active fermentation is finishing (e.g., around days 3-5), add your hops. For an authentic touch, use 10-30g of noble hops like Tettnanger, Hallertau, or Saaz, or try local versions like Motueka or Wakatu. Adding them at this stage means the remaining active yeast will consume any oxygen introduced when you open the fermenter, protecting your beer from oxidation. After any dry hop addition, allow the beer to condition for another 3 to 7 days. This gives the yeast time to "clean up" any off-flavours and allows the hop particles to settle. -
Carbonate, Lime & Enjoy: Once conditioning is complete, bottle your beer with carbonation drops. Store the bottles at room temperature for 1-2 weeks to allow for natural carbonation before chilling, adding a slice of lime, and enjoying your fresh, home brewed Cerveza.

Originating from the Hürlimann brewery in Switzerland. This lager strain’s attenuation profile allows you to brew fairly neutral flavour beers with a high drinkability.
FERMENTATION: ideally 12-15°C
REHYDRATION INSTRUCTIONS:
Sprinkle the yeast in minimum 10 times its weight of sterile water or wort at 25 to 29°C (77°F to 84°F).
Leave to rest 15 to 30 minutes.
Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.
Alternatively, pitch the yeast directly in the fermentation vessel providing the temperature of the wort is above 20°C (68°F). Progressively sprinkle the dry yeast into the wort ensuring the yeast covers all the surface of wort available in order to avoid clumps. Leave for 30 minutes, then mix the wort using aeration or by wort addition.

This top Australia craft beer is famous for its floral, tropical flavours and juicy, hazy appearance. Brick Road Hazy Pale Ale malt with wheat is already hopped to the perfect level. Just add 1.5kg of Muntons Oat malt and 300g lactose to bring the creaminess and some amazing hops. Use the yeast under the lid, or add an extra packet of fruity English Ale yeast. Dry hop with Centennial, Falconers Flight, Mosaic and Citra for those amazing flavours. Fruity deliciousness!
This kit includes:
- 1.5 kg Brick Road Hazy Pale Ale
- 1.5 kg Muntons Oat malt
- 300g g Lactose
- 1 pkt Verdant IPA or S-04
- 150 g Centennial hops
- 150 g Citra hops
- 50 g Mosaic
Instructions

Clean and sanitise fermenter, spoon, cup and jug.

Soften the malt cans in hot water for about 5 minutes.

Pour 2 litres of boiling water into your 5L jug. Open the cans and pour the contents into the jug. Add the 300g of lactose.

Mix the concentrated wort and water well, then pour into your fermenter. Top up with cold quality brewing water to 19L for approx. 5.3% ABV. Vigourously stir the wort with a large spoon to oxygenate it. Ensure the wort temperature is 18℃-22℃. Sprinkle the yeast over the wort.

Seal the fermenter lid and insert airlock. Ideally ferment at 18℃-22℃ for 10 - 14 days.

On Day 3 of fermentation, add half the hops. Ideally add inside a hop bag and remove after 48 hours. Repeat with the remaining hops on Day 5.

After 10 days, check the gravity. If the SG remains steady for three days, fermentation is complete. If in doubt, leave a few more days for better results. Keg or bottle your brew.
Simply un-screw the regular nozzle and screw on the Stout Spout and use as you would a stout tap.

With a robust brewing performance, Sabro™ proves to be a strongly expressive hop that translates its flavour incredibly well into beer.
