English Strong Bitter is often referred to as English Pale Ale or Extra Special Bitters. It is characterised by a firm bitterness (often falling in the range of 30 to 50 IBUs), however it should not overpower the malt. Balance is important and most examples range from balanced to moderately bitter.
It should have a moderate hoppy flavour and aroma, with a complex malt and yeast character. It is common for caramel/crystal malts to be used.
The ATF ESB has a complex malt flavour and aroma consisting of a malty biscuity base with layers of light to dark caramel flavours. In the background are delicate fruity esters provided by the yeast.
The hopping provides a firm bitterness that nicely balances the malt character along with a pleasant resinous, citrusy, herbal flavour and aroma with a spicy undertone. Whilst the hop flavours and aromas are apparent, they do not dominate.
The beer has a full, almost silky mouthfeel, that finishes moderately dry.
Yeast is not included in the kit. We recommend using Mangrove Jack's Liberty Bell Yeast, or you could also try Lallemand Verdant IPA.

The ATF Czech Amber Lager is a flavourful beer that blends the rich, toasted malt characteristics of amber ales with the smooth, crisp qualities of lagers. It boasts a deep, amber to copper hue, with a balanced profile featuring caramel and toasty malt flavours complemented by subtle hints of toffee and dark fruit. The finish is clean and refreshing, with a good hop bitterness that adds a touch of balance without overpowering the malt sweetness. Roggenbier translates to “Rye Beer”. It is typically 50% Rye malt giving it a characteristic grainy spicy character, which is completed by the classic weizen yeast tartness, spicy clove phenolics and fruity banana esters. With hints of dark stone fruit and caramel flavours it is great Autumn and Winter wheat beer, but due to its medium dry to dry finish it is drinkable all year round.
Yeast is not included in the kit. We recommend using Lalbrew Munich Classic or Mangrove Jack's Bavarian Wheat yeast.
Note on Rye Malt
Rye malt contains a high amount of beta glucan, which increases wort viscosity and may slow runoff during lautering and sparging, and potentially cause a stuck sparge.
A mash rest at 40℃, sometimes called a Beta Glucanase rest, can help to break down the beta glucan in the wort and reduce the risk of a stuck sparge.
As added insurance this recipe includes oat hulls in the mash. The oat hulls do not add any fermentables, but improve the filter bed of the mash to reduce the risk of a stuck sparge.
The ATF Juicy As lives up to its name. Hopped with over 7g/L in the whirlpool and over 12g/L in the the dry hop it is bursting tropical fruit and citrus aroma’s with a slightly zingy full juiciness and a nice balancing bitterness on a soft malt base.
Yeast is not included in the kit. We recommend using Froth Vape (Assumed Origin: Boddington’s) to produce a juicy hazy with a silky mouthfeel and great hop aroma and flavour.
Alternatively we recommend using Verdant IPA. Lallemand’s Verdant IPA yeast. LalBrew Verdant IPA yeast will produce fruity esters and is well suited to NEIPA’s. Verdant IPA yeast expresses high amounts of β-lyase enzyme promoting biotransformation accentuating hop flavour and aroma. and also produces high amounts of glycerol producing a beer with a silky mouthfeel.
You could also try Froth Spectra (Assumed Origin: Unknown (London)).Spectra can produce a spectrum of radiant flavour & aroma while exhibiting an elegant ester profile and velvety mouthfeel.
Alternatively you could use Lallemand's New England yeast. Lallemand New England produces beers with a unique fruit forward ester profile, which is sought after in NEIPA's. Through expression of a β-glucosidase enzyme, LalBrew® New England can promote hop biotransformation and accentuate hop flavour and aroma.
Please Note: Kettle finings are not provided with this kit as beer clarity is not required for this style of beer.

LalBrew Farmhouse™ is a non-diastatic hybrid that has been selected to make saison-style and farmhouse style beers. This product is the result of the research and development work of Renaissance Yeast in Vancouver BC, Canada. LalBrew Farmhouse™ was selected using the most advanced breeding techniques. The Renaissance research team used classical and non-GMO methods to remove the STA1 gene, responsible for the diastatic activity of Saison yeasts. Care was taken to retain normal brewing sugar utilisation to produce dry saisons. Additionally, the patented technology from University of California Davis (USA) ensures that the strain will not produce sulphurous favours, therefore enhancing the saison yeast aroma characteristics.
