High Protein Specialty Malts
The term “chitting” in malt represents the first stage of germination, where the barley has taken up enough moisture from steeping to start the magic process of converting starch into soluble sugars. Chit malt has a particularly high level of inherent starter enzymes, which contribute significantly to improving the conversion of starch, thus increasing the yield.
Precisely how Chit Malt can improve a beer’s mouthfeel and head retention results from when we kiln the malt; during the early stages of starch modification. Kilning at this point leaves long protein chains in the malt from the enzymes produced at chitting. These remain in the beer at higher levels, after fermentation.
Beers produced with Chit Malts retain higher protein content and these proteins contribute to increased levels of foam-positive proteins and improved head retention. They can also impart added mouthfeel, particularly in direr beer styles like Sours and Saisons.
Chit Malt is a great alternative to using raw adjuncts. The flavour impact in a beer is minimum if used at rates between 1-4%, with subtle green, grassy, raw grain flavours developing when used in higher percentages.
Chit Wheat offers new options for your Saisons, Sours, Low alcohol beers or Hazy Pale Ales and IPA's.
Chit Wheat can add noticeable body and velvety mouthfeel, due to wheat’s high protein content, combined with killing it at the chitting stage. Use alone, as a substitute for raw, flaked and rolled grains or in conjunction with Chit Barley.
The higher enzymatic activity in Chit Malt can also increase mash efficiency and starch conversion rates when paired with these cheaper, unmodified cereal grains.

It's a seriously addictive combination.

Yeast is not included in the kit. We recommend using Froth Buddy (Assumed Origin: Sierra Nevada), or Lallemand's BRY-97 West Coast Ale Yeast. You could also try Safale US-05, Lallemand Nottingham High Performance Ale Yeast, or Mangrove Jack's West Coast Yeast.
This recipe employs whirlpool hopping at a set temperature of 65℃ for 60 minutes. If you are unable to maintain a 65℃ whirlpool for 60 minutes you may wish to try the hop burst version.
The ATF Bohemian Pilsner is golden coloured beer with a dense, long-lasting, creamy white head. It has a rich complex maltiness with a firm yet soft and rounded bitterness complemented by the spicy flavour of Saaz hops and an earthy, spicy, floral aroma. The aftertaste is balanced between malt and hops.
Yeast is not included in the kit. If fermenting cold we recommend using Froth Vagabond (Assumed Origin: Budêjovický Budvar) or:

Note on Water Profile
The recommended water profile for this beer is very soft with no more than 7ppm of any mineral.
The beer may be brewed using other water sources, but may not have the same soft delicate mouthfeel and bitterness. Rainwater, reverse osmosis water, or bottled spring water is ideal.

Base Malt
Lager Light Malt has been subjected to a gentler kilning cycle so that a lower coloured base malt is produced. This malt is made especially for brewing an all malt lager where a light colour is desirable. This base malt can also be used alongside Gladfield Wheat Malt to brew a delicate, bright, clean malt profile wheat beer where a low colour formation is desired.
Use: A base malt for any style of beer. This malt is light in colour, with a sweet, clean flavour.

The ATF Kapiti Helles is a clean easy drinking lager; smooth and malty sweet with a soft bitterness, mild spicy and floral hop character, and a dry finish.

Big tropical and citrus fruit aromas come from the Citra, Taiheke, and Motueka hops, combining with light malts give this Pacific Ale a super-drinkable palate. Brick Road Pacific Pale Ale malt is already hopped to the perfect level. Just add Brick road Extra Light malt and the hops.

Instructions

Clean and sanitise fermenter, spoon, cup and jug.

Soften the malt cans in hot water for about 5 minutes.

Mix the concentrated wort and water well, then pour into your fermenter. Top up with cold quality brewing water to 23L for approx. 5% ABV. Vigorously stir the wort with a large spoon to oxygenate it. Ensure the wort temperature is 18℃-22℃. Sprinkle the yeast on top of the wort..

Seal the fermenter lid and insert airlock. Ideally ferment at 18℃-22℃ for 10 - 14 days.

On Day 5 of fermentation, add the hops.

After 10 days, check the gravity. If the SG remains steady for three days, fermentation is complete. If in doubt, leave a few more days for better results. Keg or bottle your brew.
Brought back from obscurity by Pierre Celis at the Hoegaarden brewery, Witbier is a great refreshing beer. With plenty of un-malted wheat along with a portion of oats, Witbier is typically cloudy with a soft grainy sweetness. Belgian Wit Yeast adds subtle banana fruitiness and clove notes, which are enhanced through the addition of coriander seeds and fresh orange yeast.
In addition to what is included in the kit you will need 12g of coriander seed and 45g of orange zest (or the zest of your favourite citrus fruit).
Yeast is not included in the kit. We recommend using Froth Unicorn (Assumed Origin: Hoegaarden), or you could use Lallemand Lalbrew Wit or Mangrove Jack's Belgian Wit Yeast.

Brick Road Wheat DME is suitable for all beer, but especially hazies, Pale Ales, Saison and Wheat Beers. For the best-tasting all-malt beer, mix well with water and Brick Road beer kits to create the finest fresh wort or your favourite yeast and Brick Road Hopped Malt.
When mixed to 23L, 1kg of this Wheat DME (2 x 500g packs) will contribute a pale gold colour up to 10 EBC, and 1.017 gravity points. You can also use it in all-grain recipes when you want only the finest malt flavour. It will replace approx. 1.34 kg of base grain in your wort.
The ATF German Pils is a clean and crisp light bodied beer with a pleasant mild grainy malt sweetness superbly balanced with a refreshing bitterness and dry finish. Hallertau Mittlefruh hops provide a classic noble hop aroma with notes of fresh hay, sweet spices, and dried flowers.

This is our interpretation of Emerson’s Bookbinder. In Emerson’s own words Bookbinder is:
A wonderfully drinkable interpretation of a classic English ale. Bookbinder is a blend of four malts combined with two classic Nelson grown European hops (Fuggles and Riwaka). The beer pours an attractive reddish brown, with a cream coloured head. Bookbinder has a sweet, perfumey, malt and hop aroma with a soft, malty, fruit and vinous palate that is both full flavoured and refreshing with a long, gently drying finish.
Yeast is not included in the kit. We recommend using Froth Vape (Assumed Origin: Boddington’s),the yeast currently by Emerson's to produce Bookbinder. Alternatively we recommend using Lallemand Verdant IPA, or you could also try Fermentis S-04 or Mangrove Jack's Liberty Bell.
The ATF Extract Recipe - ESB has a complex malt flavour and aroma consisting of a malty biscuity base with layers of light to dark caramel flavours. In the background are delicate fruity esters provided by the yeast.
The hopping provides a firm bitterness that nicely balances the malt character along with a pleasant resinous, citrusy, herbal flavour and aroma with a spicy undertone. Whilst the hop flavours and aromas are apparent, they do not dominate.
This kit includes malt and hops that require steeping.
Yeast is not included in the kit. We recommend using Mangrove Jack's Liberty Bell Yeast, or you could also try Lallemand Verdant IPA.

Instructions

Clean and sanitise fermenter, spoon, cup and jug.

Pour 2 litres of boiling water into your 5L jug. Open the can and pour the contents into the jug.

Mix the concentrated wort and water well, then pour into your fermenter. Add 1kg Brick Road DME. Don't worry if the DME clumps - it will dissolve over time. Top up with cold quality brewing water to 15L for approx. 5% ABV. Ensure the wort temperature is 18℃-22℃. Vigorously stir the wort with a large spoon to oxygenate it. Sprinkle the yeast over the wort.
