Bursting with juicy pineapple and tropical notes, this dual-purpose hop has been featured in many great beers since its release in 2010. Big Alpha Acids (13-17%) make this an effective and efficient bittering hop, but can be used in late additions to maximise the fresh, fruity aroma and flavour. El Dorado® is an exceptional new dual-purpose hop with both high Alpha Acid and intense flavours and aromas. As a bittering hop, El Dorado® lends a firm but balanced bitterness. When used in later additions, El Dorado® brings bright tropical fruit flavours and aromas of pineapple, pear, watermelon, and stone fruit.

Maibock, also known as Helles Bock, is a traditional strong, malty Bavarian lager.
The ATF Maibock delivers a clean crisp beer with a rich toasty sweetness and malty backbone that defines a Maibock. Balanced with aromatic hops delivering floral and spicy notes, providing a balanced bitterness and a subtle hint of hop aroma.

Speciality Malt
Toffee Malt is a unique malt made by Gladfield Malt. We make this unique malt by taking a lower to mid-range nitrogen winter or autumn barley variety, roasting the resulting malt at very low temperatures, and then caramelise the malt. The low temperature and slower roasting produces a malt with a very light colour, a chewy consistency, with honey or toffee flavours.
Our Toffee Malt is very popular. Not only does it add a wonderful malty, honey toffee flavour to lighter coloured beers but it also enhances beer stability, body and mouth feel. Because of its high moisture content, we recommend that brewers mill the Toffee Malt mixed with other malts to avoid clogging the malt mill.
Use: Toffee Malt adds toffee and honey flavours and has a low colour impact.

This modern craft style XPA is an award-winner with its floral, fruity flavour balanced with a fresh, clean bitterness. Brick Road Pacific Pale Ale malt is already hopped to the perfect level. Just add 1kg of Brick Road Extra Light DME, 100g of dextrose and hops. Dry hop with Centennial, Amarillo and Citra for those amazing flavours. Super-good!

Required Extra

Instructions

Clean and sanitise fermenter, spoon, cup and jug.

Soften the malt can in hot water for about 5 minutes.

Pour 2 litres of boiling water into your 5.3L jug. Open the can and pour the contents into the jug. Add the 100g of dextrose.

Mix the concentrated wort and water well, then pour into your fermenter. Top up with cold quality brewing water to 19L for approx. 5% ABV. Add 1kg Brick Road DME. It doesn't matter if there are some clumps of DME, these will dissolve over time. Vigorously stir the wort with a large spoon to oxygenate it. Ensure the wort temperature is 18℃-22℃. Sprinkle the yeast over the wort.

Seal the fermenter lid and insert airlock. Ideally ferment at 18℃-22℃ for 10 - 14 days.

On Day 5 of fermentation, add the hops. Ideally add inside a hop bag and remove after 48 hours.

After 10 days, check the gravity. If the SG remains steady for three days, fermentation is complete. If in doubt, leave a few more days for better results. Keg or bottle your brew.
The ATF Southern Pilsner is a hoppy NZ style Pilsner with prominent lemon citrus aromas and flavours with a tropical fruit background and hints of resinous pine. It has light malt flavour with hints of creamy honey and a crisp drying finish.
Yeast is not included in the kit. If fermenting cold we recommend using SafLager SH-45. The ideal Lager yeast to enhance hop thiol release result, crafting beers with enhanced levels of fruitiness and intensified citrus and tropical notes
If fermenting warm we recommend using: SafLager SH-45 (up to 18℃). Alternatively we recommend using Fermentis SafLager W-34/70 or Mangrove Jack's Californian Lager Yeast.

Loral has a noble heritage that straddles the fence between old and new world hop aromatics. Speciality Malt
Crystal Malts, also known as Caramel Malts, are used to add colour, flavour and sweetness to beer. Gladfield’s Crystal Malts are made from lower to mid-range nitrogen winter or autumn barley varieties, that are soaked in water, germinated, left wet and then heated. This converts the sugars while they are still in the grain. We then roast our Crystal Malts in our high-tech purpose-built roasting drum making sure that the crystallisation process is even throughout. This gives a sweetness and even colour to the final malt.
Crystal Malts have no diastatic power, so must always be used in conjunction with a base malt. Crystal Malt can be used in varying amounts and intensities to an array of beer styles to add colour, flavour and aroma to the beer. It is important to note that our Crystal Malt must be used fresh to get the best results.
Use: Adds a nutty bittersweet caramel flavour and body.

The Smoked Bee has a wonderful sweet floral smokey aroma and flavour sitting on top of layers of light toasty, nutty, caramel and toffee aromas and flavours with hints of dark fruits. It has a beautiful deep red brown colour and finishes medium dry.
Don’t let the deep red brown colour fool you. This is a great summer bbq beer.
Yeast is not included in the kit. We recommend using Froth Buddy (Assumed Origin: Sierra Nevada), or Lallemand's BRY-97 West Coast Ale Yeast. You could also try Safale US-05, Lallemand Nottingham High Performance Ale Yeast, or Mangrove Jack's West Coast Yeast.
You will also require 500g of honey to make this beer. We recommend using a honey with full rich flavour such as bush honey.
Sub-Base Malt
Our Rye Malt is produced from locally grown rye corn. Rye does not have an outer husk so it benefits from a finer mill setting than our malted barleys. The rye is malted with the same care as our other malts and modifies beautifully in the kiln.
Use: Gives colour, spicy flavours and a clean, dry mouth feel.
Rate: Recommend starting with 10%, can then be increased up to 50% for more rye flavour.

Munich Dunkel is a malt oriented German dark lager. It is a rich complex beer with flavours of warm toasty bread crust and rich caramel and toffee. Despite the malt forward flavour, Munich Dunkel has a dry finish and does not come across as overly sweet making it a very sessionable beer.
Traditionally Munich Dunkel would have been made using a decoction mash to encourage the Maillard reactions that help give the beer its rich malty flavours. The ATF Munich Dunkel uses a small amount of Aurora Malt to help provide the maltiness typical of the style.

Originating from the USDA-ARA breeding program, Cascade is an aroma-type cultivar bred in 1956 and released in 1972. It was developed by open pollination of a Fuggle seedling. Cascade is the most popular variety in craft brewing and is known for having a unique floral, spicy and citrus character with balanced bittering potential.
AROMA PROFILE: FLORAL, GRAPEFRUIT, PINE
Roggenbier translates to “Rye Beer”. It is typically 50% Rye malt giving it a characteristic grainy spicy character, which is completed by the classic weizen yeast tartness, spicy clove phenolics and fruity banana esters. With hints of dark stone fruit and caramel flavours it is great Autumn and Winter wheat beer, but due to its medium dry to dry finish it is drinkable all year round.
Yeast is not included in the kit. We recommend using Lalbrew Munich Classic or Mangrove Jack's Bavarian Wheat yeast.
Note on Rye Malt
Rye malt contains a high amount of beta glucan, which increases wort viscosity and may slow runoff during lautering and sparging, and potentially cause a stuck sparge.
A mash rest at 40℃, sometimes called a Beta Glucanase rest, can help to break down the beta glucan in the wort and reduce the risk of a stuck sparge.
As added insurance this recipe includes oat hulls in the mash. The oat hulls do not add any fermentables, but improve the filter bed of the mash to reduce the risk of a stuck sparge.
