The ideal Lager yeast to enhance hop thiol release
SafLager™ SH-45 is a carefully selected lager yeast, ideal for expressing some of the aromatic compounds coming from the raw materials in beer, more specifically the hops. This strain possesses the capability to release and esterify thiols. As a result, beers crafted with SafLagerTM SH-45 may present enhanced levels of fruitiness and intensified citrus and tropical notes.
This Classic Lager is a New Zealand icon. If you're a supporter of NZ sport - you'll love this clean, bitter lager. Two cans of Brick Road Dry Lager malt are hopped to the perfect level, and with the addition of Green Bullet hops you will recognise its distinctive taste. Use the yeast under the lid, or if you can control the fermentation temperature at 12℃-18℃ add a packet of W-34/70, or if you can control the fermentation temperature at 12℃-20℃ add a packet of NovaLager to get the clean crisp flavour of a premium lager.

Instructions

Clean and sanitise fermenter, spoon, cup and jug.

Soften the malt cans in hot water for about 5 minutes.

Pour 2 litres of boiling water into your 5L jug. Open the cans and pour the contents into the jug.

Mix the concentrated wort and water well before adding the Green Bullet or Motueka hops. Leave the hops to steep for 10 minutes and then pour into your fermenter. Top up with cold quality brewing water to 20L for approx. 5% ABV. Ensure the wort temperature is 12℃ - 22℃. Vigorously stir the wort with a large spoon to oxygenate it. Sprinkle the yeast over the wort.

Seal the fermenter lid and insert airlock. Ideally ferment at 12℃-15℃ for 10 - 14 days.

After 10 days, check the gravity. If the SG remains steady for three days, fermentation is complete. If in doubt, leave a few more days for better results. Keg or bottle your brew.
A well bodied lager, golden and crisp. Light and malty with hints of vanilla, red fruits and a cleansing subtle bitterness to finish. The Liberty hops offer a mild slightly spicy and floral flavour.

Gladfield Pilsner Malt is made from English and European bred barley varieties. Only plump low-protein barley are used to make our Pilsner Malt. This style of barley produces higher extracts and helps eliminate potential protein haze issues in the beer.
Our carefully controlled kilning gives a clean malty character without adding too much colour. Pilsner or Lager Malt can be used to produce ales as well as lagers. This malt does have sufficient diastatic power to convert the addition of 10–20% coloured malts to the mash, but it is not designed for large amounts of unmalted adjuncts.
Brewers should also note that it is important that the mash pH is controlled properly to obtain the best efficiencies and outcomes in the finished beer.
Use: As a base malt for any beer style. It is light in colour and imparts a sweet, clean flavour when brewed.

This Classic Gold Lager kit comes complete with Pacific lager yeast. Gold Lager is a clean, crisp lager with balanced malt sweetness from pale malts. Low hop bitterness brings maximum refreshment without compromising flavour. Perfectly refreshing in hot conditions.
For a Gold Lager add 1.5kg Brick Road Extra Light malt extract, or 1kg Brick Road Extra Light Dry malt extract or 1kg dextrose. For more flavour, dry-hop with 30g or more of NZ hops like Riwaka, Nelson Sauvin or Motueka for a stone fruit and citrus flavours.

Our Munich Malt is perfect for brewing classic malty continental lagers and robust ales. Gladfield’s Munich Malt is germinated using barley with a slightly higher nitrogen content to create more intense colour through greater Maillard reactions. This is achieved by allowing higher levels of moist air recirculation and low temperatures to occur during the early and intermediate stages of the kilning cycle followed by a final long high temperature cycle. This kilning process results in a malt which is rich, sweet, toasty and imparts a biscuit flavour with a touch of breadiness. Our Munich Malt imparts a deep orange colour and a malty, toasted, nutty, grainy flavour to the brewed beer.
Use: Munich Malt is a base malt suitable for brewing German-style beers, or when a dry toasted nutty flavour is required.

Instructions

Mix the concentrated wort and water well, then pour into your fermenter. Top up with cold quality brewing water to 20L for approx. 4.5% ABV. Add 1kg Brick Road DME. It doesn't matter if there are some clumps of DME, these will dissolve over time. Add the dry enzyme. Vigorously stir the wort with a large spoon to oxygenate it. Ensure the wort temperature is 12℃-20℃. Sprinkle the yeast over the wort.

This all-in-one can contains our exceptional hopped wort—the foundation of your great beer. Just follow these steps for a crisp, refreshing Pilsner Blonde:

Mix & Make it Your Own: Empty the contents of the can into your fermenter. Add about 3 litres of hot water and stir thoroughly to dissolve the concentrated wort. Then, add your 1kg of brewing sugar (dextrose) and stir again until fully dissolved. Finally, top up the fermenter with cold water to reach the 23-litre mark.

Pro Brewer Tip: For an even drier, crisper beer and a lower carbohydrate content, add a sachet of glucoamylase enzyme with the yeast. It breaks down unfermentable sugars, allowing the yeast to produce more alcohol and resulting in a lower final gravity.

Pitch & Ferment: Sprinkle in the included New World Lager Yeast. Seal your fermenter and place it in a stable, room-temperature environment (this versatile hybrid yeast can be fermented at up to 22°C or 72°F). The active fermentation will typically be complete within 3 to 7 days. You'll know it's slowing down when the vigorous bubbling in the airlock subsides.

Dry Hop (Optional) & Condition:
If you are dry-hopping, this is the time to do it. Just as the active fermentation is finishing (e.g., around days 3-5), add your hops (10-30g recommended). Adding them at this stage means the remaining active yeast will consume any oxygen introduced when you open the fermenter, protecting your beer from oxidation.
After any dry hop addition, allow the beer to condition for another 3 to 7 days. This gives the yeast time to "clean up" any off-flavours and allows the hop particles to settle. -
Carbonate & Enjoy: Once conditioning is complete, bottle your beer with carbonation drops. Store the bottles at room temperature for 1-2 weeks to allow for natural carbonation before chilling and enjoying your fresh, homebrewed Pilsner Blonde.

Breeding:
Wai-iti™ Brand HORT7709 is a new hop variety developed by New Zealand Plant and Food Research with release from the New Zealand Hop breeding Programme in 2011. It was selected for its low alpha acid and high oils content. Wai-iti™ is a granddaughter of the USDA developed Liberty, and is a triploid hop derived from 1/3rd Hallertau Mittelfrüeh.
Selection:
Selectors comment on the intensity of the aromas, attributable for the most part to the high weight of oil and oils to alpha ratio. Freshly squeezed limes with top notes of mixed citrus are the standouts in a heady blend of essential oils.
Brewing:
Citrus characters apparent in selection step back a little in the finished product to make way for a blend of stone fruits such as fresh peaches and ripe apricot. Low cohumulone and high levels of farnesene create a rounded clean bitterness when used in single hopped beers. The high oil content fills in all the corners when used in late additions, the hop back or in dry hopping.
