This is our interpretation of Emerson’s Bookbinder. In Emerson’s own words Bookbinder is:
A wonderfully drinkable interpretation of a classic English ale. Bookbinder is a blend of four malts combined with two classic Nelson grown European hops (Fuggles and Riwaka). The beer pours an attractive reddish brown, with a cream coloured head. Bookbinder has a sweet, perfumey, malt and hop aroma with a soft, malty, fruit and vinous palate that is both full flavoured and refreshing with a long, gently drying finish.
Yeast is not included in the kit. We recommend using Froth Vape (Assumed Origin: Boddington’s),the yeast currently by Emerson's to produce Bookbinder. Alternatively we recommend using Lallemand Verdant IPA, or you could also try Fermentis S-04 or Mangrove Jack's Liberty Bell.

The ATF Supercharger Clone is our recipe to replicate this much loved beer.

This recipe employs whirlpool hopping at a set temperature of 65℃ for 60 minutes. If you are unable to maintain a 65℃ whirlpool for 60 minutes you may wish to try the hop burst version.
The ATF Extract Recipe - Single Hop Series Amarillo IPA delivers lots and lots of citrus fruit. Think blood orange, orange zest and grapefruit, tangerine and lemon, balanced by floral notes that sits beautifully alongside hints of toffee and honeycomb.

With the aroma of sweet crema brewed from freshly roasted coffee on top of subtle chocolate and nutty dark fruit caramel flavours, the ATF Velveteen Stout is a revelation.
Unlike a traditional dry stout, the ATF Velveteen Stout has no acrid bitterness or astringency from the use of large amounts of traditional dark malts.
It has a full malt backbone and a creamy velvety mouthful with sufficient hop bitterness to ensure it isn’t too sweet and leave you wanting more.

As the name suggests, this beer is an Anzac biscuit in liquid form. It has pleasant biscuity and silky oat character with the pleasing sweetness reminiscent of golden syrup. With toasted coconut in the background and an underlying rich dark fruit character this is great Autumn beer.
Yeast is not included in the kit. We recommend using Froth Rudeboy (Assumed Origin: Youngs Brewery) or Mangrove Jack's Empire Ale yeast. You could also try Mangrove Jack's Liberty Bell yeast.
In addition to the ingredients included in the kit you will also require 75g of toasted coconut flakes and 100g of treacle.
English Porter is a moderate-strength brown beer with a restrained roasted character and bitterness. It may have a range of roasted flavours, generally without burnt qualities, and often has a chocolate-caramel-malty profile.
The ATF English Porter has a pleasant mild roasted coffee and cacao character with underlying biscuity dryness and rich dark caramel/toffee flavours. This is balanced nicely by a restrained bitterness and floral, spicy hop character with hints of floral honey.
Whilst it has a full mouthfeel it finishes medium dry making it very drinkable.
Yeast is not included in the kit. We recommend using Mangrove Jack's Liberty Bell yeast or SafAle S-04.
The ATF Celebration IPA places Centennial hops front and centre. Harking back to West Coast IPA’s of yesteryear, the ATF Celebration IPA has a light body with slight caramel tones and a firm bitterness leading to a dry finish. The Centennial hops are the star providing a prominent floral citrus flavour and aroma with notes of orange, grapefruit, and lemon.

NEIPA’s are an unfiltered IPA packed with hop flavour and aroma. Typically hazy in appearance with a soft bitterness and full rounded mouthful, NEIPA are all about hop flavour and aroma.
ATF East Coast Anthem is a homage to the NEIPA. Liberally whirlpool hopped with Mosaic and Simcoe it is bursting with flavours and aromas of tropical fruits, citrus, pine, and some earthy herbal notes. With most of the calculated IBU contribution coming for the whirlpool hops the bitterness is softer than you may expect.
NEIPA’s are particularly sensitive to oxidation and are best drunk young.
Yeast is not included in the kit. We recommend using Froth Vape (Assumed Origin: Boddington’s) to produce a juicy hazy with a silky mouthfeel and great hop aroma and flavour.
Alternatively we recommend using Verdant IPA. Lallemand’s Verdant IPA yeast. LalBrew Verdant IPA yeast will produce fruity esters and is well suited to NEIPA’s. Verdant IPA yeast expresses high amounts of β-lyase enzyme promoting biotransformation accentuating hop flavour and aroma. and also produces high amounts of glycerol producing a beer with a silky mouthfeel.
You could also try Froth Spectra (Assumed Origin: Unknown (London)).Spectra can produce a spectrum of radiant flavour & aroma while exhibiting an elegant ester profile and velvety mouthfeel.
Alternatively you could use Lallemand's New England yeast. Lallemand New England produces beers with a unique fruit forward ester profile, which is sought after in NEIPA's. Through expression of a β-glucosidase enzyme, LalBrew® New England can promote hop biotransformation and accentuate hop flavour and aroma.

Your Brewing Journey, Made Simple:
This all-in-one can contains our exceptional hopped wort—the foundation of your great beer. Just follow these steps to create your perfect Pale Ale:

Mix & Make it Your Own: Empty the contents of the can into your fermenter. Add about 3 litres of hot water and stir thoroughly to dissolve the concentrated wort. Then, add your 1kg of brewing sugar (dextrose) and stir again until fully dissolved. Finally, top up the fermenter with cold water to reach the 23-litre mark.

Pro Brewer Tip: Adjust the body and ABV by using different fermentables like Dry Malt Extract (DME). See the can for recipe options.

Pitch & Ferment: Sprinkle in the included Pale Ale Yeast. Seal your fermenter and place it in a stable, room-temperature environment (around 18-22°C). The active fermentation will typically be complete within 3 to 7 days. You'll know it's slowing down when the vigorous bubbling in the airlock subsides.

Dry Hop (Highly Recommended) & Condition:
For that classic flavour, dry-hopping is essential. Just as the active fermentation is finishing (e.g., around days 3-5), add your hops. We recommend 30g to 100g of New World hops like Galaxy, Pride of Ringwood, Nectaron, Nelson Sauvin, or Motueka. Adding them at this stage means the remaining active yeast will consume any oxygen introduced, protecting your beer's vibrant hop aroma.
After dry hopping, allow the beer to condition for another 3 to 7 days. This gives the yeast time to "clean up" and allows the hop particles to settle. -
Carbonate & Enjoy: Once conditioning is complete, bottle your beer with carbonation drops. Store the bottles at room temperature for 1-2 weeks to allow for natural carbonation before chilling and enjoying your fresh, homebrewed Pale Ale.

Berliner Weisse is a refreshing low alcohol beer with a pleasant tartness that originated in Germany. A great summer beer that was once called the champagne of the north and is often served with a flavoured syrup such as Woodruff or raspberry.
The ATF Berliner Weisse's acidity/sourness is provided by WildBrew Philly Sour yeast, a unique yeast that primarily produces lactic acid during the initial phase of fermentation before switching over to ethanol production. This allows this beer to produced without the need for kettle souring.

Instructions

Clean and sanitise fermenter, spoon, cup and jug.

Soften the malt cans in hot water for about 5 minutes.

Pour 2 litres of boiling water into your 5L jug. Open the cans and pour the contents into the jug.

Boil 1 litre of water. Pour into a suitable jug and allow to cool to 80 Celcius. add the steeping hops. Leave for 20 minutes before adding to your wort.

Mix the concentrated wort and water well, then pour into your fermenter. Top up to 22 litres with cold quality brewing water. Using a sieve or coffee press, strain your 1L of steeped hops liquid. Ensure the wort temperature is 15℃-25℃. Vigorously stir the wort with a large spoon to oxygenate it. Sprinkle the yeast over the wort.

Seal the fermenter lid and insert airlock. Ferment at 20℃-22℃ for four days.

On Day 5, put the hops into a sanitised hop sock or tube, tied with non-scented dental floss. Gently sink the hops into the wort.

Check the gravity. If the SG remains steady for three days, fermentation is complete. Keg or bottle your brew.
The ATF Kapiti Best Bitter is an excellent session beer with plenty of flavour. Earthy, spicy, and floral aromas and flavours with citrus notes sit on top of malty toffee sweetness, balanced by biscuity dryness and a pleasing bitterness with the quintessential underlying fruitiness typical of an English Ale.
Yeast is not included in the kit. We recommend using Fermentis Safale S-04, or you could also try Mangrove Jack's Liberty Bell or Lallemand Verdant IPA.
Brew a classic, smooth, and malty Irish Red Ale with a beautiful balance of rich caramel sweetness, toasty malt character with roasty notes in the finish, and a hint of earthy hop bitterness. Pours a deep red with a creamy off-white head.

The ATF Baltic Porter is a rich malt oriented beer with distinctive aromas of dark toffee underneath roasted coffee and chocolate.
Smooth and malty rich with some complex alcohol flavours, layers of sweet warm soothing toasty maltiness, caramel, dark toffee, notes of caramelised dark fruits, and smooth roasted coffee and chocolate.
Being a lager it has a smooth clean crispness unlike its English cousin and will benefit from a period of lagering.
Yeast is not included in the kit. If fermenting cold we recommend using Fermentis SafLager W-34/70 or Lallemand Diamond Lager Yeast.

English Strong Bitter is often referred to as English Pale Ale or Extra Special Bitters. It is characterised by a firm bitterness (often falling in the range of 30 to 50 IBUs), however it should not overpower the malt. Balance is important and most examples range from balanced to moderately bitter.
It should have a moderate hoppy flavour and aroma, with a complex malt and yeast character. It is common for caramel/crystal malts to be used.
The ATF ESB has a complex malt flavour and aroma consisting of a malty biscuity base with layers of light to dark caramel flavours. In the background are delicate fruity esters provided by the yeast.
The hopping provides a firm bitterness that nicely balances the malt character along with a pleasant resinous, citrusy, herbal flavour and aroma with a spicy undertone. Whilst the hop flavours and aromas are apparent, they do not dominate.
The beer has a full, almost silky mouthfeel, that finishes moderately dry.

Irish Stouts are a black beer with a pronounced roasted flavour, often similar to coffee. The balance can range from fairly even to quite bitter, with the more balanced versions having a little malty sweetness and the bitter versions being quite dry.
The ATF Irish Dry Stout’s wonderful aroma of roasted coffee with hints of roasted cacao will have you thinking you have just walked into a coffee roasters. Full of roasted flavours with a light body, low ABV, and dry bitter finish, this beer is very very drinkable all year round.
Yeast is not included in the kit. We recommend using Mangrove Jack's New World Strong Ale yeast or Lallemand Nottingham High Performance Ale Yeast.
The ATF Colonial IPA has a balance of spicy, floral, and light citrus aromas and flavours on a light toasty malt base with a slight creamy honey like mouthfeel and a firm balancing bitterness leading to a dry finish.
