The ATF Extract Recipe - ESB has a complex malt flavour and aroma consisting of a malty biscuity base with layers of light to dark caramel flavours. In the background are delicate fruity esters provided by the yeast.
The hopping provides a firm bitterness that nicely balances the malt character along with a pleasant resinous, citrusy, herbal flavour and aroma with a spicy undertone. Whilst the hop flavours and aromas are apparent, they do not dominate.
This kit includes malt and hops that require steeping.
Yeast is not included in the kit. We recommend using Mangrove Jack's Liberty Bell Yeast, or you could also try Lallemand Verdant IPA.

Berliner Weisse is a refreshing low alcohol beer with a pleasant tartness that originated in Germany. A great summer beer that was once called the champagne of the north and is often served with a flavoured syrup such as Woodruff or raspberry.
The ATF Berliner Weisse's acidity/sourness is provided by WildBrew Philly Sour yeast, a unique yeast that primarily produces lactic acid during the initial phase of fermentation before switching over to ethanol production. This allows this beer to produced without the need for kettle souring.

This Classic American Porter kit comes complete with American ale yeast. This rich, malty American Porter has satisfying toasty, chocolate, toffee flavours from the roasted malts.
For an American Porter add 1.5kg Brick Road Dark malt extract, 1kg Brick Road Dark Dry malt extract (OR 1kg dextrose). Finish with up to 100g of American hops like Cascade, Citra or Columbus for resiny, earthy hop aromas.

The ATF Fullers 1845 Clone aims to replicate the strong, rich and fruity ale, that was specially commissioned to celebrate 150 years of the Fuller, Smith and Turner partnership. For best results this beer should be bottle conditioned for 100 days. Bottle conditioning should take place in a cool dark environment.

Best poured slowly, 1845 delivers a sweet, fruit cake aroma, a dark tawny colour and a dry finish that sings of spices and raisin. Those fruity characteristics harmonise perfectly with the biscuity malts amid a clever and complex range of subtle flavours, the depth of which you could only find in a live beer fermented in the bottle.

If crash cooling it is possible to cause the yeast thermal shock, which may be an issue when bottle conditioning, particularly a higher alcohol beer.

The ATF IPL (India Pale Lager) brings together the clean crispness of a lager with all the hoppy goodness of an IPA.
It has a clean malt base with sufficient body to carry the layers of luscious citrus and tropical fruit flavours ending with a smooth satisfying bitterness. Notes of lemon, mandarin, orange, grapefruit, and passionfruit abound with mango and papaya in the background.

Whilst the light blonde hue may hint at a lightly flavoured beer, the ATF Riwaka Blonde is anything but lacking in flavour. Bursting with passionfruit and citrus on top of a sweet malt base with a slightly creamy texture that finishes dry, the ATF Riwaka Blonde is a distinctive beer that will soon become a favourite.

This recipe employs whirlpool hopping at a set temperature of 65℃ for 60 minutes. If you are unable to maintain a 65℃ whirlpool for 60 minutes you may wish to try the hop burst version.
The ATF Belgian Blonde is easy drinking with a low, but pleasing hop bitterness. It has a target ABV of 7.3%, with subtle restrained spicy, fruity, and alcohol flavours supported by a grainy, slightly sweet Pilsner malt character and pleasant noble hop flavour and aroma. High carbonation and a medium body can contribute to a slightly creamy overall mouthfeel.
This beer will benefit from a two week (or more) period of cold conditioning.
Yeast is not included in the kit. We recommend using Mangrove Jack's Belgian Ale yeast, or you could also try Fermentis SafAle BE-256 or Lallemand Abbaye.
Biére de Garde (beer for keeping) is a traditional malt oriented farmhouse ale from Northern France that was typically brewed in early winter then cellared (lagered) until spring and summer when it was then consumed.
The ATF Ambre Biére de Garde is an amber coloured version of the style. A strong malt oriented beer with layers of caramel, dark fruit, and nutty flavours with ripe fruit (especially plum if using Mangrove Jack's Belgian Ale) esters and balanced phenolics.
The beer will benefit from a period of lagering.
