This Craft Red IPA will satisfy your tastebuds. Brick Road Craft Columbus Red IPA malt is already hopped to the perfect bitterness level for this malty, hoppy IPA, and comes with 30g of Columbus for dry-hopping. Use the yeast under the lid and add an extra packet of S-04. Mix with 1.5kg of Muntons Maris Otter liquid malt and dry hop with the 30g of Columbus under the lid plus 30g Simcoe, 30g Mosaic and 30g Citra. Top to 19L for approx. 5.8% ABV.

Instructions

Clean and sanitise fermenter, spoon, cup and jug.

Soften the malt cans in hot water for about 5 minutes.

Pour 2 litres of boiling water into your 5L jug. Open the cans and pour the contents into the jug.

Mix the concentrated wort and water well, then pour into your fermenter. Top up with cold quality brewing water to 19L. Ensure the wort temperature is 18℃-22℃. Vigorously stir the wort with a large spoon to oxygenate it. Sprinkle the yeast over the wort.

Seal the fermenter lid and insert airlock. Ideally ferment at 18℃-22℃ for 10 - 14 days.

On Day 5 of Fermentation, add the dry hops.

After 10 days, check the gravity. If the SG remains steady for three days, fermentation is complete. If in doubt, leave a few more days for better results. Keg or bottle your brew.
This Red IPA brings you a rich malty flavour from the amber ale malts, and a pungent, earthy, peppery aroma with a hint of citrus. This Craft Beer Kit comes complete with Premium Ale Yeast and Columbus dry hop pellets.
For a Red IPA, we recommend you add 1.5kg Brick Road Light malt extract plus 1kg Brick Road Light Dry malt extract (or 1kg dextrose). To add more piney, earthy hop aromas, dry hop with up to 200g of other American 'C' hops like Cascade, Centennial, or Columbus.
We recommend you use 1.5kg Brick Road Light malt extract, plus 1.5kg Brick DME Road Light (or 1kg of dextrose).

Irish Stouts are a black beer with a pronounced roasted flavour, often similar to coffee. The balance can range from fairly even to quite bitter, with the more balanced versions having a little malty sweetness and the bitter versions being quite dry.
The ATF Extract Recipe - Irish Stout has an great aroma of roasted coffee with hints of delicate floral notes from the East Kent Goldings hops.. With a light body, low ABV, and dry moderate bitter finish, this beer is very very drinkable all year round.

English Porter is a moderate-strength brown beer with a restrained roasted character and bitterness. It may have a range of roasted flavours, generally without burnt qualities, and often has a chocolate-caramel-malty profile.
The ATF Extract English Porter has a pleasant mild roasted coffee and cacao character with underlying biscuity dryness and rich dark caramel/toffee flavours. This is balanced nicely by a restrained bitterness.
Whilst it has a full mouthfeel it finishes medium dry making it very drinkable.
This kit includes malt that require steeping.
We recommend using Mangrove Jack's Liberty Bell yeast or SafAle S-04.

Brew a vibrant, modern Hazy IPA showcasing the bright citrus and tropical character of Krush hops. A beer bursting with juicy citrus and tropical fruit aromas, balanced by a satisfyingly soft, smooth mouthfeel that defines the style.
To elevate the beer we recommend using WHC Mango Madness yeast to enhance the beer's inherent juiciness while adding distinct layers of ripe mango flavour and aroma. This yeast perfectly complements the Krush hops, creating a cohesive profile where citrus, pineapple, and passionfruit mingle beautifully with tropical mango notes.
Mango Madness yeast is an innovative and cutting-edge strain selected to revolutionise the brewing process with its unique aromatic profile, thermotolerant properties, and ability to accelerate fermentation. By using Mango Madness yeast, you can achieve faster turnarounds without compromising on the quality and flavour profiles of your hop forward beers.
We recommend fermenting the ATF Tropical Krush with Mango Madness at 35℃ for 3 - 5 days before cooling the beer to 16℃ before adding the second dry hop. When cooling the beer care should be taken to avoid oxidising the beer. Please refer to the ATF Dry Hopping Techniques and How to minimise Oxidation article for some options.
If you are unable to control the fermentation temperature and/or are unable to seal the fermenter to avoid oxidation, we recommend using Froth Vape (Assumed Origin: Boddington’s) to produce a juicy hazy with a silky mouthfeel and great hop aroma and flavour.
Alternatively we recommend using Verdant IPA. Lallemand’s Verdant IPA yeast. LalBrew Verdant IPA yeast will produce fruity esters and is well suited to NEIPA’s. Verdant IPA yeast expresses high amounts of β-lyase enzyme promoting biotransformation accentuating hop flavour and aroma. and also produces high amounts of glycerol producing a beer with a silky mouthfeel.
You could also try Froth Spectra (Assumed Origin: Unknown (London)).Spectra can produce a spectrum of radiant flavour & aroma while exhibiting an elegant ester profile and velvety mouthfeel.
Alternatively you could use Lallemand's New England yeast. Lallemand New England produces beers with a unique fruit forward ester profile, which is sought after in NEIPA's. Through expression of a β-glucosidase enzyme, LalBrew® New England can promote hop biotransformation and accentuate hop flavour and aroma.
Please Note: Kettle finings are not provided with this kit as beer clarity is not required for this style of beer.
The ATF Jolly Monk is a strong blonde, slightly gold beer with a malty aroma and a creamy mouthfeel. It has a delicate sweet malty taste with a moderate bitterness and a fantastic complex marriage of spice, fruity esters, phenolics and alcohol.
Yeast is not included in the kit. We recommend using Mangrove Jack's Belgian Tripel yeast or you could also try Fermentis SafAle BE-256 or Lallemand Abbaye.

The ATF Baltic Porter is a rich malt oriented beer with distinctive aromas of dark toffee underneath roasted coffee and chocolate.
Smooth and malty rich with some complex alcohol flavours, layers of sweet warm soothing toasty maltiness, caramel, dark toffee, notes of caramelised dark fruits, and smooth roasted coffee and chocolate.
Being a lager it has a smooth clean crispness unlike its English cousin and will benefit from a period of lagering.
Yeast is not included in the kit. If fermenting cold we recommend using Fermentis SafLager W-34/70 or Lallemand Diamond Lager Yeast.
If fermenting warm we recommend using Fermentis SafLager W-34/70 or Mangrove Jack's Californian Lager Yeast.

The ATF Citra Pale Ale delivers a beer that is hard to resist. Loaded with Citra hops, the beer has brash citrus, grapefruit, and orange flavours and aromas, with hints of resinous pine. The clean light malty base with a background of nutty toasted caramel balances the hops perfectly. The beer finishes dry and will have you reaching for more.

Biére de Garde (beer for keeping) is a traditional malt oriented farmhouse ale from Northern France that was typically brewed in early winter then cellared (lagered) until spring and summer when it was then consumed.
The ATF D’or Biére de Garde is a golden coloured beer with a malty sweet aroma and a creamy honey like mouthfeel. A complex beer that is spicy, fruity, and peppery, with a dry finish and slight acidity making it very drinkable. The beer will benefit from a period of lagering.
Yeast is not included in the kit. We recommend using Mangrove Jack's French Saison yeast or SafAle BE-134.

Roggenbier translates to “Rye Beer”. It is typically 50% Rye malt giving it a characteristic grainy spicy character, which is completed by the classic weizen yeast tartness, spicy clove phenolics and fruity banana esters. With hints of dark stone fruit and caramel flavours it is great Autumn and Winter wheat beer, but due to its medium dry to dry finish it is drinkable all year round.
Yeast is not included in the kit. We recommend using Lalbrew Munich Classic or Mangrove Jack's Bavarian Wheat yeast.
Note on Rye Malt
Rye malt contains a high amount of beta glucan, which increases wort viscosity and may slow runoff during lautering and sparging, and potentially cause a stuck sparge.
A mash rest at 40℃, sometimes called a Beta Glucanase rest, can help to break down the beta glucan in the wort and reduce the risk of a stuck sparge.
As added insurance this recipe includes oat hulls in the mash. The oat hulls do not add any fermentables, but improve the filter bed of the mash to reduce the risk of a stuck sparge.
A big 9% IIPA with a lighter mouthfeel than you would expect due to the use of dextrose to increase the original gravity without adding unfermentable sugars.
With most of the IBU's coming from whirlpool hopping the bitterness is smooth, but sufficient to provide a medium dry finish.
A mix of Willamette, Chinook, and Columbus give this beer a spicy, earthy, floral, and deeply engaging hoppiness with some citrus notes.
Yeast is not included in the kit. We recommend using two packets of Mangrove Jack's New World Strong yeast or you could also try using two packets of Lallemand's Nottingham High Performance Ale yeast.

Unlike a traditional dry stout, the ATF Extract Recipe - Smooth Stout has no acrid bitterness or astringency from the use of large amounts of traditional dark malts.

Note on Water Profile
The recommended water profile for this beer is very soft with no more than 7ppm of any mineral.
The beer may be brewed using other water sources, but may not have the same soft delicate mouthfeel and bitterness. Rainwater, reverse osmosis water, or bottled spring water is ideal.
