Sitting in between a pale ale and an IPA, the ATF Citrus XPA is a light bodied refreshing beer with plenty of flavour. It has a great citrus aroma with grapefruit being prominent and a smooth clean finish with a refreshing bitterness.
Yeast is not included in the kit. We recommend using Froth Buddy (Assumed Origin: Sierra Nevada), or Lallemand's BRY-97 West Coast Ale Yeast. You could also try Safale US-05, Lallemand Nottingham High Performance Ale Yeast, or Mangrove Jack's West Coast Yeast.

The ATF Jolly Monk is a strong blonde, slightly gold beer with a malty aroma and a creamy mouthfeel. It has a delicate sweet malty taste with a moderate bitterness and a fantastic complex marriage of spice, fruity esters, phenolics and alcohol.
Yeast is not included in the kit. We recommend using Mangrove Jack's Belgian Tripel yeast or you could also try Fermentis SafAle BE-256 or Lallemand Abbaye.

Whilst the light blonde hue may hint at a lightly flavoured beer, ATF Riwaka Blonde is anything but lacking in flavour. Bursting with passionfruit and citrus on top of a sweet malt base with a hint of toasty biscuit and a slightly creamy texture that finishes dry, the ATF Riwaka Blonde is a distinctive beer that will soon become a favourite.

This recipe employs whirlpool hopping at a set temperature of 65℃ for 60 minutes. If you are unable to maintain a 65℃ whirlpool for 60 minutes you may wish to try the hop burst version.

The ATF Classic NZ Lager is a clean and crisp light bodied beer infused with the flavour of the unique Green Bullet Hops, the workhorse of traditional New Zealand breweries.
With a spicy fresh green grass aroma and clean crisp mouthfeel with a firm bitterness and dry finish, the ATF Classic NZ Lager is the Kiwi summer beer of yesteryear.
Yeast is not included in the kit. We recommend using Fermentis Saflager S-189 if fermenting cold.
If you are unable to perform a cold fermentation you can ferment warm (20℃) using Mangrove Jack's Californian Lager yeast, Fermentis SafLager W-34/70, or Lallemand NovaLager yeast.

Lallemand NovaLager
LalBrew NovaLager™ is a robust lager strain with ideal characteristics for lager beer production including fast fermentations and high attenuation. The distinct flavour profile is very clean with slight esters over a wide temperature range.
The optimal temperature range for LalBrew NovaLager™ yeast when producing traditional styles is 10 – 20°C.
Introducing the ATF Nectabomb a Hazy IPA that is a Tropical Explosion of Flavour!
Bursting with an impressive double dry hop of 14.5 grams per liter of Nectron hops, this beer is a tantalising explosion of tropical flavours and hazy goodness that will transport you to a paradise of hoppy delight.
With each sip, Nectabomb reveals an abundant array of fruity and citrusy flavours with undertones of stone fruit that dance upon your palate.
Despite the explosion of hop flavour, Nectabomb maintains a balanced and smooth profile. A carefully selected blend of malts provides a sturdy foundation, offering a subtle sweetness that complements the hop-forward nature of the beer. The result is a well-rounded experience where the hops take centre stage, while the malt backbone provides a gentle supporting role.
Yeast is not included in the kit. We recommend using Froth Vape (Assumed Origin: Boddington’s) to produce a juicy hazy with a silky mouthfeel and great hop aroma and flavour.
Alternatively we recommend using Verdant IPA. Lallemand’s Verdant IPA yeast. LalBrew Verdant IPA yeast will produce fruity esters and is well suited to NEIPA’s. Verdant IPA yeast expresses high amounts of β-lyase enzyme promoting biotransformation accentuating hop flavour and aroma. and also produces high amounts of glycerol producing a beer with a silky mouthfeel.
You could also try Froth Spectra (Assumed Origin: Unknown (London)).Spectra can produce a spectrum of radiant flavour & aroma while exhibiting an elegant ester profile and velvety mouthfeel.
Alternatively you could use Lallemand's New England yeast. Lallemand New England produces beers with a unique fruit forward ester profile, which is sought after in NEIPA's. Through expression of a β-glucosidase enzyme, LalBrew® New England can promote hop biotransformation and accentuate hop flavour and aroma.
Please Note: Kettle finings are not provided with this kit as beer clarity is not required for this style of beer.
The ATF Extract Recipe - West Coast APA is a classic West Coast American Pale Ale. Pouring a beautiful copper colour it exhibits a great hoppy aroma with prominent notes of tropical fruit (passionfruit, papaya) and citrus along with notes of berry and pine.

The ATF Altbier is a malty sweet beer with caramel and biscuit flavours; a firm balancing bitterness, and a medium dry finish. Complementing the malt flavours and aroma is a pleasant and mild noble hop earthy spiciness and subtle fruity vinous character.
Yeast is not included in the kit. We recommend using Fermentis Safale K-97 yeast or Lallemand Köln yeast.
To achieve the subtle fruit character it is important to use the recommended yeast or another German/Kolsch Ale yeast.
The ATF Tangyshake NEIPA is the best grown-up milkshake you’ve ever had. A pleasant tangy sourness balanced by a creamy milkshake like sweetness and texture and bursting with citrus and tropical fruits (think tangerine, pink grapefruit, melon, papaya) with hints of creamy coconut. The addition of vanilla rounds out the milkshake experience.
In addition to what is included in the kit you will need one vanilla pod and sufficient vodka in which to soak the vanilla pod. You could use 60ml of pure vanilla extract instead, although the flavour may not be as fresh and bright as the vanilla pod soaked in vodka.
The ATF Tangyshake NEIPA's acidity is provided by WildBrew Philly Sour yeast, a unique yeast that primarily produces lactic acid during the initial phase of fermentation before switching over to ethanol production.
Philly Sour takes longer than most yeasts to begin and complete fermentation so it is important to pitch the right amount of yeast.
Yeast is not included in the kit. We recommend using Lallemand Wildbrew™ Philly Sour Yeast.

Unlike its Bohemian grandparent it showcases the unique qualities of New Zealand hops with aromas of orange citrus and passionfruit up front with tropical fruit, lemon, lime, and stone fruit being a strong supporting act.

Biére de Garde (beer for keeping) is a traditional malt oriented farmhouse ale from Northern France that was typically brewed in early winter then cellared (lagered) until spring and summer when it was then consumed.
The ATF Ambre Biére de Garde is an amber coloured version of the style. A strong malt oriented beer with layers of caramel, dark fruit, and nutty flavours with ripe fruit (especially plum if using Mangrove Jack's Belgian Ale) esters and balanced phenolics.
The beer will benefit from a period of lagering.
Yeast is not included in the kit. We recommend using Mangrove Jack's Belgian Ale or you could also try Fermentis SafAle BE-256.
If crash cooling it is possible to cause the yeast thermal shock, which may be an issue when bottle conditioning, particularly a higher alcohol beer.
