With the aroma of sweet crema brewed from freshly roasted coffee on top of subtle chocolate and nutty dark fruit caramel flavours, the ATF Velveteen Stout is a revelation.
Unlike a traditional dry stout, the ATF Velveteen Stout has no acrid bitterness or astringency from the use of large amounts of traditional dark malts.
It has a full malt backbone and a creamy velvety mouthful with sufficient hop bitterness to ensure it isn’t too sweet and leave you wanting more.
Yeast is not included in the kit. We recommend using Froth Rudeboy (Assumed Origin: Youngs Brewery) or Mangrove Jack's Empire Ale yeast. You could also try Mangrove Jack's Liberty Bell yeast.
The ATF Bohemian Pilsner is golden coloured beer with a dense, long-lasting, creamy white head. It has a rich complex maltiness with a firm yet soft and rounded bitterness complemented by the spicy flavour of Saaz hops and an earthy, spicy, floral aroma. The aftertaste is balanced between malt and hops.
Yeast is not included in the kit. If fermenting cold we recommend using Froth Vagabond (Assumed Origin: Budêjovický Budvar) or:

Note on Water Profile
The recommended water profile for this beer is very soft with no more than 7ppm of any mineral.
The beer may be brewed using other water sources, but may not have the same soft delicate mouthfeel and bitterness. Rainwater, reverse osmosis water, or bottled spring water is ideal.
ATF Wicked Weed has an intoxicating aroma of passionfruit going head to head with apricot and orchard fruits with citrus notes peaking through. A cacophony of flavour carried by a full malt base that provides a great platform for the hops to be the star of the show.
Yeast is not included in the kit. We recommend using Froth Vape (Assumed Origin: Boddington’s) to produce a juicy hazy with a silky mouthfeel and great hop aroma and flavour.

Through expression of a β-glucosidase enzyme, LalBrew® New England can promote hop biotransformation and accentuate hop flavour and aroma.

The ATF Smooth Hoperator is a beer colloquially called a Session IPA. Full of citrus and tropical fruits, with a subtle floral character on a light caramel malt base, it is a very drinkable lower ABV beer that is one smooth hoperator.
Yeast is not included in the kit. We recommend using Mangrove Jack's Liberty Bell yeast.
This recipe employs whirlpool hopping at a set temperature of 65℃ for 60 minutes. If you are unable to maintain a 65℃ whirlpool for 60 minutes you may wish to try the hop burst version.

A big 9% IIPA with a lighter mouthfeel than you would expect due to the use of dextrose to increase the original gravity without adding unfermentable sugars.
With most of the IBU's coming from whirlpool hopping the bitterness is smooth, but sufficient to provide a medium dry finish.
A mix of Willamette, Chinook, and Columbus give this beer a spicy, earthy, floral, and deeply engaging hoppiness with some citrus notes.
Yeast is not included in the kit. We recommend using two packets of Mangrove Jack's New World Strong yeast or you could also try using two packets of Lallemand's Nottingham High Performance Ale yeast.

High Protein Specialty Malts
The term “chitting” in malt represents the first stage of germination, where the barley has taken up enough moisture from steeping to start the magic process of converting starch into soluble sugars. Chit malt has a particularly high level of inherent starter enzymes, which contribute significantly to improving the conversion of starch, thus increasing the yield.
Precisely how Chit Malt can improve a beer’s mouthfeel and head retention results from when we kiln the malt; during the early stages of starch modification. Kilning at this point leaves long protein chains in the malt from the enzymes produced at chitting. These remain in the beer at higher levels, after fermentation.
Beers produced with Chit Malts retain higher protein content and these proteins contribute to increased levels of foam-positive proteins and improved head retention. They can also impart added mouthfeel, particularly in direr beer styles like Sours and Saisons.
Chit Malt is a great alternative to using raw adjuncts. The flavour impact in a beer is minimum if used at rates between 1-4%, with subtle green, grassy, raw grain flavours developing when used in higher percentages.
Chit Wheat offers new options for your Saisons, Sours, Low alcohol beers or Hazy Pale Ales and IPA's.
Chit Wheat can add noticeable body and velvety mouthfeel, due to wheat’s high protein content, combined with killing it at the chitting stage. Use alone, as a substitute for raw, flaked and rolled grains or in conjunction with Chit Barley.
The higher enzymatic activity in Chit Malt can also increase mash efficiency and starch conversion rates when paired with these cheaper, unmodified cereal grains.

The ATF Kiwi Pilsner has a clean soft malty sweetness with hints of sweet hay balanced by a firm bitterness. Unlike its Bohemian grandparent it showcases the unique qualities of New Zealand hops with aromas of orange citrus and passionfruit up front with tropical fruit, lemon, lime, and stone fruit being a strong supporting act.

This all-in-one can contains our exceptional hopped wort—the foundation of your great beer. Just follow these steps to create your perfect Pale Ale:

Mix & Make it Your Own: Empty the contents of the can into your fermenter. Add about 3 litres of hot water and stir thoroughly to dissolve the concentrated wort. Then, add your 1kg of brewing sugar (dextrose) and stir again until fully dissolved. Finally, top up the fermenter with cold water to reach the 23-litre mark.

Pitch & Ferment: Sprinkle in the included Pale Ale Yeast. Seal your fermenter and place it in a stable, room-temperature environment (around 18-22°C). The active fermentation will typically be complete within 3 to 7 days. You'll know it's slowing down when the vigorous bubbling in the airlock subsides.

Dry Hop (Highly Recommended) & Condition:
For that classic flavour, dry-hopping is essential. Just as the active fermentation is finishing (e.g., around days 3-5), add your hops. We recommend 30g to 100g of New World hops like Galaxy, Pride of Ringwood, Nectaron, Nelson Sauvin, or Motueka. Adding them at this stage means the remaining active yeast will consume any oxygen introduced, protecting your beer's vibrant hop aroma.
After dry hopping, allow the beer to condition for another 3 to 7 days. This gives the yeast time to "clean up" and allows the hop particles to settle. -
Carbonate & Enjoy: Once conditioning is complete, bottle your beer with carbonation drops. Store the bottles at room temperature for 1-2 weeks to allow for natural carbonation before chilling and enjoying your fresh, homebrewed Pale Ale.

We recommend fermenting the ATF Tropical Krush with Mango Madness at 35℃ for 3 - 5 days before cooling the beer to 16℃ before adding the second dry hop. The ATF Sunshine Kolsch is a clean, crisp, delicately-balanced beer with a subtle fruit and hop character. Subdued maltiness throughout leads into a pleasantly well-attenuated and refreshing finish. Freshness makes a huge difference with this beer as the delicate character can fade quickly with age.
Yeast is not included in the kit. We recommend using either Fermentis Safale K-97 yeast or Lallemand Köln yeast.
To achieve the subtle fruit character it is important to use the recommended yeast or another German/Kolsch Ale yeast.

Discovered by Virgil Gamache Farms, Amarillo® is one of the top ten aroma varieties utilised by craft brewers. It features relatively high alpha acids along with extremely high levels of myrcene for citrus and grapefruit flavours.
It is widely used in many popular commercial beers and is well suited to ESB's, Pale Ales, and IPA's.
AROMA PROFILE: APRICOT, GRAPEFRUIT, LEMON, MELON, ORANGE, PEACH
Idaho 7 presents as pungent, tropical fruit and citrus (think apricot, orange, red grapefruit, papaya) with big notes of resiny pine and hints of black tea. Excellent as a single hop or part of a blend for IPA, pale ale, and other hop forward beers.

ATF Kvazy is a Kveik Hazy thats a little bit crazy.
Utilising the phenomenal Voss Kveik, ATF Kvazy can be ready to drink in just 7 days, but it will be at its best after another week or two of cold conditioning.
Dry hopped with 330g of hops, the ATF Kvazy is bursting with tropical fruit with an underlying citrus character and a full juicy mouthfeel. The ATF Kvazy is bound to become a favourite.
