Originating from the USDA-ARA breeding program, Cascade is an aroma-type cultivar bred in 1956 and released in 1972. It was developed by open pollination of a Fuggle seedling. Cascade is the most popular variety in craft brewing and is known for having a unique floral, spicy and citrus character with balanced bittering potential.
AROMA PROFILE: FLORAL, GRAPEFRUIT, PINE
ATF Sabrodaze will leave you in a tropical hoppy daze. Loaded with Sabro (12.5g/L in the boil & approx. 13.6g/L in the dry hop) it has a wonderful tropical fruit aroma with pineapple to the fore and hints coconut in the background with a soft, almost creamy mouthfeel.
Yeast is not included in the kit. We recommend using Froth Vape (Assumed Origin: Boddington’s) to produce a juicy hazy with a silky mouthfeel and great hop aroma and flavour.
Alternatively we recommend using Verdant IPA. Lallemand’s Verdant IPA yeast. LalBrew Verdant IPA yeast will produce fruity esters and is well suited to NEIPA’s. Verdant IPA yeast expresses high amounts of β-lyase enzyme promoting biotransformation accentuating hop flavour and aroma. and also produces high amounts of glycerol producing a beer with a silky mouthfeel.
You could also try Froth Spectra (Assumed Origin: Unknown (London)).Spectra can produce a spectrum of radiant flavour & aroma while exhibiting an elegant ester profile and velvety mouthfeel.
Alternatively you could use Lallemand's New England yeast. Lallemand New England produces beers with a unique fruit forward ester profile, which is sought after in NEIPA's. Through expression of a β-glucosidase enzyme, LalBrew® New England can promote hop biotransformation and accentuate hop flavour and aroma.

Maibock, also known as Helles Bock, is a traditional strong, malty Bavarian lager.
The ATF Maibock delivers a clean crisp beer with a rich toasty sweetness and malty backbone that defines a Maibock. Balanced with aromatic hops delivering floral and spicy notes, providing a balanced bitterness and a subtle hint of hop aroma.
Yeast is not included in the kit. If fermenting cold we recommend using Fermentis SafLager W-34/70 or Lallemand Diamond Lager Yeast.

The ATF Tangyshake NEIPA is the best grown-up milkshake you’ve ever had. A pleasant tangy sourness balanced by a creamy milkshake like sweetness and texture and bursting with citrus and tropical fruits (think tangerine, pink grapefruit, melon, papaya) with hints of creamy coconut. The addition of vanilla rounds out the milkshake experience.
In addition to what is included in the kit you will need one vanilla pod and sufficient vodka in which to soak the vanilla pod. You could use 60ml of pure vanilla extract instead, although the flavour may not be as fresh and bright as the vanilla pod soaked in vodka.
The ATF Tangyshake NEIPA's acidity is provided by WildBrew Philly Sour yeast, a unique yeast that primarily produces lactic acid during the initial phase of fermentation before switching over to ethanol production.
Philly Sour takes longer than most yeasts to begin and complete fermentation so it is important to pitch the right amount of yeast.
Yeast is not included in the kit. We recommend using Lallemand Wildbrew™ Philly Sour Yeast.

Cryo Hops® pellets can be utilised anywhere whole-leaf hops and hop pellets are traditionally applied.
Dosage rate: We recommend a dosage rate of Cryo Hops pellets of 40-50% of T-90 hop pellets by weight.

Roggenbier translates to “Rye Beer”. It is typically 50% Rye malt giving it a characteristic grainy spicy character, which is completed by the classic weizen yeast tartness, spicy clove phenolics and fruity banana esters. With hints of dark stone fruit and caramel flavours it is great Autumn and Winter wheat beer, but due to its medium dry to dry finish it is drinkable all year round.
Yeast is not included in the kit. We recommend using Lalbrew Munich Classic or Mangrove Jack's Bavarian Wheat yeast.
Note on Rye Malt
Rye malt contains a high amount of beta glucan, which increases wort viscosity and may slow runoff during lautering and sparging, and potentially cause a stuck sparge.
A mash rest at 40℃, sometimes called a Beta Glucanase rest, can help to break down the beta glucan in the wort and reduce the risk of a stuck sparge.
As added insurance this recipe includes oat hulls in the mash. The oat hulls do not add any fermentables, but improve the filter bed of the mash to reduce the risk of a stuck sparge.
Developed by the USDA breeding program in Washington State and released in 1985 as a high alpha bittering variety, Chinook is a cross between Petham Golding and a USDA male. In recent years, it has found favour as a dual purpose hop in the craft brewing community as a result of its spice and pine aroma characteristics.
It works well at any stage of the boil and in the dry hop and works particularly well in American Pale Ales (APA) and IPA's, but can be used in many styles.
Chinook feature in Stone’s Arrogant Bastard and in addition to Cascade and Centennial in Sierra Nevada’s Celebration Ale – a beer famous for its piney, citrusy character.

ATF Kvazy is a Kveik Hazy thats a little bit crazy.
Utilising the phenomenal Voss Kveik, ATF Kvazy can be ready to drink in just 7 days, but it will be at its best after another week or two of cold conditioning.
Dry hopped with 330g of hops, the ATF Kvazy is bursting with tropical fruit with an underlying citrus character and a full juicy mouthfeel. The ATF Kvazy is bound to become a favourite.

This recipe employs whirlpool hopping at a set temperature of 65℃ for 60 minutes. If you are unable to maintain a 65℃ whirlpool for 60 minutes you may wish to try the hot whirlpool version.

Instructions

Clean and sanitise fermenter, spoon, cup and jug.

Soften the malt cans in hot water for about 5 minutes.

Pour 2 litres of boiling water into your 5L jug. Open the cans and pour the contents into the jug.

Boil 1 litre of water. Pour into a suitable jug and allow to cool to 80 Celcius. add the steeping hops. Leave for 20 minutes before adding to your wort.

Mix the concentrated wort and water well, then pour into your fermenter. Top up to 22 litres with cold quality brewing water. Using a sieve or coffee press, strain your 1L of steeped hops liquid. Ensure the wort temperature is 15℃-25℃. Vigorously stir the wort with a large spoon to oxygenate it. Sprinkle the yeast over the wort.

Seal the fermenter lid and insert airlock. Ferment at 20℃-22℃ for four days.

On Day 5, put the hops into a sanitised hop sock or tube, tied with non-scented dental floss. Gently sink the hops into the wort.

Check the gravity. If the SG remains steady for three days, fermentation is complete. Keg or bottle your brew.

A dual purpose / bittering hop with a spicy “dried fruit” character and solid finish.
Breeding:
A triploid aroma type developed through by New Zealand’s Plant & Food Research. Pacifica™ Brand 77-01 was bred through the open pollination of the highly regarded Hallertauer Mittlefru¨h variety. Pacifica™ was released on completion of successful brewing trials in 1994.
Selection:
Pacifica™ displays classic Hallertau citrus and floral aroma character which selectors mark as a real standout. The aroma is supported by a generous oils profile making selection possible for several beer styles from this stylish hop.
Brewing:
Pacifica™ brings something of a blend of new and old-world taste descriptors to the brewers' forum. Orange marmalade aptly describes the citrus aroma notes achieved through late addition. Bittering quality is such that early kettle additions net a soft yet solid finish even in highly bittered beers.
Applications:
Finds application where a higher oil concentration and proportion of Linalool are required to impact on how the hop character integrates into the final product. Ideally suited to traditional German lager styles and finding wider application to a new generation through the international craft market’s insatiable thirst for Pale Ale.
This big APA has a strong malt backbone to support its huge-hopped flavours with big American C-hops; Citra, Centennial and this version has Cascade with the can, plus Simcoe.

Instructions

Clean and sanitise fermenter, spoon, cup and jug.

Soften the malt cans in hot water for about 5 minutes.

Pour 2 litres of boiling water into your 5L jug. Open the cans and pour the contents into the jug.

(Optional step, not necessary with the Brick Road malt). Steep the crystal and toffee malts, steep for 30 minutes in 2L of water at 65℃, and strain the water into your fermenter.

Mix the concentrated wort and water well, then pour into your fermenter. Top up to 19 litres with cold quality brewing water. Ensure the wort temperature is 18℃ - 25℃. Vigorously stir the wort with a large spoon to oxygenate it. Sprinkle the yeast over the wort.

Seal the fermenter lid and insert airlock. Ferment at 18℃-22℃ for four days.

On Day 4, put half of each of the hops into a sanitised hop sock or tube, tied with non-scented dental floss. Gently sink the hops into the beer.

On Day 7, remove the first dry hop and add the remaining hops as above.

Check the gravity. If the SG remains steady for three days, fermentation is complete. Keg or bottle your brew.

The Smoked Bee has a wonderful sweet floral smokey aroma and flavour sitting on top of layers of light toasty, nutty, caramel and toffee aromas and flavours with hints of dark fruits. It has a beautiful deep red brown colour and finishes medium dry.
Don’t let the deep red brown colour fool you. This is a great summer bbq beer.
Yeast is not included in the kit. We recommend using Froth Buddy (Assumed Origin: Sierra Nevada), or Lallemand's BRY-97 West Coast Ale Yeast. You could also try Safale US-05, Lallemand Nottingham High Performance Ale Yeast, or Mangrove Jack's West Coast Yeast.
You will also require 500g of honey to make this beer. We recommend using a honey with full rich flavour such as bush honey.

A soft bittering / dual purpose hop with fresh citrus and complex spice characters
Breeding:
NZ Pacific Jade Brand HORT1524 is a triploid alpha type developed by the cross of the NZ variety "First Choice" (a relative of the Late Cluster) and an Old Line Saazer Male. Released from the New Zealand Hop Research Programme by HortReasearch Centre Riwaka in 2004.
Selection:
Selected on its average alpha of 12-14% with Cohumulone in the region of 24% and an excellent oils profile. The aroma of this hop is described as bold as it delivers a herbal infusion of fresh citrus and crushed black pepper.
Brewing:
Suited for use as a bittering hop with some excellent results also being seen in dual purpose applications, with a soft bitterness attributable to the low cohumulone. The citrus aroma and flavour notes work well to temper malt sweetness in fullish Ales especially as a finishing hop.

Applications:
Typically to replace less interesting Alpha varieties where a softer bitterness and higher oil profile is desired. NZ Pacific Jade exemplifies current market direction and what is being achieved in the New Zealand Hops breeding programme.
This light gold Pale Ale has a base of pale ale malts to showcase the tropical fruit aroma of the Mosaic hops. This Craft Beer Kit comes complete with American Ale Yeast and Mosaic dry hop pellets.
For a Pale Ale, we recommend you add 1.5kg Brick Road Extra Light malt extract . To boost the tropical fruit aromas, add up to 200g of Australian or New Zealand hops like Galaxy, Nelson Sauvin or Motueka hops.
