Speciality Malt
RedBack Malt is a unique malt made by Gladfield Malt. This malt is prepared using a special process before going into the roaster, and then roasted until Maillard reactions occur. The wort colour is bright with good clarity but most importantly is a lovely red hue.
RedBack Malt gives a lovely malty dried fruit and toasted flavour to the finished beer. The wonderful red colour is added to the beer without imparting an opalescence that can occur with other similar malts.
RedBack Malt is also used to increase body and head retention in the finished beer due to the lower modification level and saccharification in the roaster. It can be used up to 15%, and complements a range of base malts.
Use: RedBack Malt adds malty, dried fruit and toasted flavours as well as a red hue.

Enjoy this clear, fresh Extra Dry extra cold. Brick Road Dry Lager malt is already hopped to the perfect level. Just add 1 packet of dry enzyme to make this lager extra dry. Use the yeast under the lid, or if you can control the fermentation temperature at 12℃-18℃ add a packet of W-34/70, or if you can control the fermentation temperature at 12℃-20℃ add a packet of NovaLager to get the clean crisp flavour of a premium lager. Beautiful!

Instructions

Clean and sanitise fermenter, spoon, cup and jug.

Soften the malt can in hot water for about 5 minutes.

Pour 2 litres of boiling water into your 5L jug. Open the can and pour the contents into the jug.

Mix the concentrated wort and water well, then pour into your fermenter. Top up with cold quality brewing water to 20L for approx. 4.5% ABV. Add 1kg Brick Road DME. It doesn't matter if there are some clumps of DME, these will dissolve over time. Add the dry enzyme. Vigorously stir the wort with a large spoon to oxygenate it. Ensure the wort temperature is 12℃-20℃. Sprinkle the yeast over the wort.

Seal the fermenter lid and insert airlock. Ideally ferment at 12℃-15℃ for 10 - 14 days.

After 10 days, check the gravity. If the SG remains steady for three days, fermentation is complete. If in doubt, leave a few more days for better results. Keg or bottle your brew.

This full-bodied dark, malty, Imperial Porter is a truly satisfying beer, with caramel and cocoa sweetness balanced by a medium hop bitterness. Sweetness and body can be added with 1kg lactose. This Craft Beer Kit comes complete with American Ale Yeast and Chinook dry hop pellets.
For an Imperial Porter, we recommend you add: 1.5kg Brick Road Dark malt extract plus 1kg Brick Road Dark Dry malt extract (or 1kg dextrose).

The Smoked Bee has a wonderful sweet floral smokey aroma and flavour sitting on top of layers of light toasty, nutty, caramel and toffee aromas and flavours with hints of dark fruits. It has a beautiful deep red brown colour and finishes medium dry.
Don’t let the deep red brown colour fool you. This is a great summer bbq beer.
Yeast is not included in the kit. We recommend using Froth Buddy (Assumed Origin: Sierra Nevada), or Lallemand's BRY-97 West Coast Ale Yeast. You could also try Safale US-05, Lallemand Nottingham High Performance Ale Yeast, or Mangrove Jack's West Coast Yeast.
You will also require 500g of honey to make this beer. We recommend using a honey with full rich flavour such as bush honey.
Super F is a blended formulation that has been specifically designed for the rapid sedimentation of yeast, protein and other haze forming particles primarily for use in tank conditioned beer.

Application
Super F is best added during transfer of beer from fermentation vessel (FV) to maturation vessel or conditioning tank.
Rates of Use
This product must be mixed prior to use.
Rates of addition are typically within the range of 0.70ml per litre up to 1.75ml per litre. The exact rate will depend upon whether or not kettle finings have been used, the addition of auxiliary finings, the degree of yeast flocculation, yeast count, pH, temperature (chilling the beer is recommended for optimal performance) and the strength of the beer. Optimisations should be carried out to determine the dosage rates more accurately. If you have used the correct dosage rate the beer should clear in 24 - 48 hours. The sediment should be firm with no fluffy appurtenance above the sediment.

Increases the mouthfeel of your beer and improves it's head. This premium malt has been spray-dried into a fine soluble powder. Spray drying preserves all the flavour and does not darken the malt. Spraymalt is produced by atomising malt into tiny droplets and then rapid drying. Use in place of sugar or dextrose.
Base/Distill Malt
Gladfield’s Distillers Malt is a premium malt produced exclusively from distilling barley varieties with the right nitrogen content. The barley has been gently kilned to preserve enzyme content and the resulting malt has both high extract and diastatic power.
Distillers Malt will add malty, sweet flavours to the finished whisky. Our Distillers Malt is primarily suited to single malt distilling and can be used in conjunction with Gladfield’s Peat Smoked or Manuka Smoked Malts if required. All our Distiller Malt varieties are made from non-glycosidic nitrile barley. Gladfield also make smoked malts – Peat Smoked Malt and Manuka Smoked Malt.
Use: Primarily suited for making single malt whiskies.

High Protein Specialty Malts
The term “chitting” in malt represents the first stage of germination, where the barley has taken up enough moisture from steeping to start the magic process of converting starch into soluble sugars. Chit malt has a particularly high level of inherent starter enzymes, which contribute significantly to improving the conversion of starch, thus increasing the yield.
Precisely how Chit Malt can improve a beer’s mouthfeel and head retention results from when we kiln the malt; during the early stages of starch modification. Kilning at this point leaves long protein chains in the malt from the enzymes produced at chitting. These remain in the beer at higher levels, after fermentation.
Beers produced with Chit Malts retain higher protein content and these proteins contribute to increased levels of foam-positive proteins and improved head retention. They can also impart added mouthfeel, particularly in direr beer styles like Sours and Saisons.
Chit Malt is a great alternative to using raw adjuncts. The flavour impact in a beer is minimum if used at rates between 1-4%, with subtle green, grassy, raw grain flavours developing when used in higher percentages.
Chit Wheat offers new options for your Saisons, Sours, Low alcohol beers or Hazy Pale Ales and IPA's.
Chit Wheat can add noticeable body and velvety mouthfeel, due to wheat’s high protein content, combined with killing it at the chitting stage. Use alone, as a substitute for raw, flaked and rolled grains or in conjunction with Chit Barley.
The higher enzymatic activity in Chit Malt can also increase mash efficiency and starch conversion rates when paired with these cheaper, unmodified cereal grains.

Cryo Hops® pellets are the concentrated lupulin of whole-leaf hops containing resins and aromatic oils. It is designed to provide intense hop flavour and aroma, enabling brewers to efficiently dose large quantities of alpha acids and oils without introducing astringent flavours or vegetative material. Cryo Hops® pellets can be utilised anywhere whole-leaf hops and hop pellets are traditionally applied.
Dosage rate: We recommend a dosage rate of Cryo Hops pellets of 40-50% of T-90 hop pellets by weight.

Breeding:
Kohatu® Brand HORT3829 is a triploid aroma type produced through the crossing of a Hallertau Mittlefruh and a New Zealand Male with North American and European parentage. Kohatu® was released from the New Zealand Plant and Food Research hop breeding programme in 2011.
Selection:
Kohatu® has been described as having an intense fresh tropical fruit character during selections and these early sensory evaluations brought this hop to the attention of researchers.
Brewing:
Initial brewing trials displayed a hop of great versatility with excellent stable flavour and aroma impacts. Fruity characters seen in sensory selections had carried through into the finished product, which was very satisfying. Importantly, the real stand out has been the consistency and quality of bitterness in dual purpose applications.

Breeding
Riwaka Brand 85.6-23 is a triploid aroma type bred during the development of New Zealand Hops with a difference programme through crossing "Old Line" Saazer with specially developed New Zealand breeding selections. It was first released by New Zealand's Plant & Food Hop Research Centre in 1997.
Selection
Riwaka™ is a real standout during selection especially when “rubbing up” for aroma scores its powerful grapefruit “citrussy” characters are literally breathtaking. This variety is seen to have higher than average oil, almost double that of its Saazer parent.
Brewing
If you want to say “New Zealand Hops” in your beer than this variety says it all. The pure weight of the oil character experienced during selection carries right through to the glass. A punchy addition to the new world styles of Pales Ale and New Zealand Pilseners.
Applications
A bold fruity hop variety suitable for big styles such as IPAs and Imperial Pilsners.
Brick Road Extra Light Malt makes great-tasting beer with Brick Road beer kits, or with Brick Road Hopped Malt extract cans, or in all-grain recipes when you want only the finest malt flavour.
This can will contribute a light-straw colour up to 5 EBC in 23L, 1.021 gravity points and will replace approx. 1.75 kg of extra light base grain in your wort. Extra Light is particularly good for Lagers, Pilsners, IPA’s and Pale Ales.
Brick Road Hopped Amber Malt makes great-tasting beer with your favourite yeast and Brick Road unhopped Malt extract cans (or Brick Road Dry Malt Extract). You can also use it in all-grain recipes when you want only the finest hopped malt flavour.
This can will contribute a gold colour up to 11 EBC and medium bitterness of 27 IBU in 23L, and 1.021 gravity points. It will replace approx. 1.75 kg of golden base grain and bittering hops in your wort. Hopped Amber Malt is particularly good for Amber Ales, APA’s, and English Bitters.
