In 1841, Anton Dreher became the “King of Beer” when he revolutionised brewing by combining lightly kilned (Vienna) malt with lager yeast. In doing so, he introduced a toasted, clean, and crisp beer that would grow to become one of the most popular beer styles across the continent. Our version: MaltZeit is made with 100% Vienna Malt, keeping it as true as possible to Anton’s vision for the style almost 200 years ago. It’s smooth, malty, and slightly toasted notes provide a crisp European lager enhanced by the included 30g Hallertau dry hops pellets. Makes 35 pints of approx. 5% ABV lager.
Requires the addition of 1kg Brick Road Extra Light DME or 1kg dextrose.

Base Malt
Also known as: Honey and Melanoidin Malt
Gladfield’s Aurora Malt is an aromatic malt which has been developed to produce rich bready, fruit cake aromas and imparts an orange/red colour to the brew. If you want to make that big malty, robust beer, then this is a great malt to use. The barley has undergone a long traditional germination process followed by a carefully controlled kilning regime to create a reaction between the complex sugars and amino acids. The resulting Maillard reaction is responsible for the colour, flavour and aroma of our Aurora Malt. This malt is ideal for brewing dark ales, Belgium styles, and high alcohol beers. Crystal Malt will add sweetness to Aurora Malt and further enhance the bready and fruitcake aromas. RedBack and Shepherds Delight malts bring out the red colours of Aurora and also introduce complementary flavours to the finished beer.
Use: Aurora Malt adds a rich malt flavour to beers.

LalBrew NovaLager™ is a true bottom-fermenting Saccharomyces pastorianus hybrid from the novel Group III lineage that has been selected to produce clean lager beers with distinct flavour characteristics and superior fermentation performance.
LalBrew NovaLager™ is a robust lager strain with ideal characteristics for lager beer production including fast fermentations and high attenuation. The distinct flavour profile is very clean with slight esters over a wide temperature range.
This strain is a low VDK/diacetyl producer and utilises patented technology from the University of California Davis (USA) that inhibits the production of hydrogen sulphide (H2S) off-flavours, therefore reducing the maturation time associated with lager beer production.
Through expression of a β-glucosidase enzyme, LalBrew NovaLager can also promote hop biotransformation and accentuate hop flavour and aroma making it an ideal candidate for hoppy lagers.
Brewing Properties
In Lallemand’s Standard Conditions Wort at 12°C (53.6°F) LalBrew NovaLager™ yeast exhibits:
- Vigorous fermentation that can be completed in 6 days.
- High Attenuation and Medium Flocculation.
- Aroma and flavour are clean with low to medium esters, no sulphur. This strain is POF negative.
The optimal temperature range for LalBrew NovaLager™ yeast when producing traditional styles is 10 – 20°C (50 – 68°F).
Lag phase, total fermentation time, attenuation and flavour are dependent on pitch rate, yeast handling, fermentation temperature and nutritional quality of the wort.

This product is the result of the research and development work of Renaissance Bioscience Corp. (Vancouver BC, Canada) in partnership with Lallemand Brewing. LalBrew NovaLager™ was selected using classical and non-GMO breeding methods to obtain a novel Saccharomyces cerevisiae x Saccharomyces eubayanus hybrid strain that defines a novel Group III (Renaissance) lager lineage that is distinct from any other traditional Saccharomyces pastorianus strains.
Traditional Bitter -The classic English ale, well hopped with a rich malty flavour – a drink to be savoured. Best enjoyed at cellar temperature.

This pack contains a balance of malt, hops and sugars to emulate the particular style of beer. Add this to a regular beer pack. It only takes a few extra minutes. Use in place of dextrose or sugar to produce a fuller bodied, fuller flavoured beer.
Base Malt
Our Munich Malt is perfect for brewing classic malty continental lagers and robust ales. Gladfield’s Munich Malt is germinated using barley with a slightly higher nitrogen content to create more intense colour through greater Maillard reactions. This is achieved by allowing higher levels of moist air recirculation and low temperatures to occur during the early and intermediate stages of the kilning cycle followed by a final long high temperature cycle. This kilning process results in a malt which is rich, sweet, toasty and imparts a biscuit flavour with a touch of breadiness. Our Munich Malt imparts a deep orange colour and a malty, toasted, nutty, grainy flavour to the brewed beer.
Use: Munich Malt is a base malt suitable for brewing German-style beers, or when a dry toasted nutty flavour is required.

Brick Road Amber Malt makes great-tasting beer with Brick Road beer kits, or with Brick Road Hopped Malt extract cans, or in all-grain recipes when you want only the finest malt flavour.
This can will contribute a gold colour up to 11 EBC in 23L, 1.021 gravity points and will replace approx. 1.75 kg of ale base grain in your wort. Amber Malt is particularly good for Amber Ales, APA’s, and English Bitters.
Pours pale straw, with white head. Clean aroma with subtle hints of vanilla. Light malt flavour, with slight honey notes. Ripe yet dry finish.

ATF Luminant IPA is a bright and fruit-forward hazy IPA, exclusively hopped with Luminosa for a vibrant tropical character. It presents a light, glowing appearance and a soft, pillowy texture. The aroma and flavour are filled with notes of peach, mandarin, and passionfruit, leading to a smooth and refreshing finish.
Yeast is not included in the kit. We recommend using Froth Vape (Assumed Origin: Boddington’s) to produce a juicy hazy with a silky mouthfeel and great hop aroma and flavour.
Alternatively we recommend using Verdant IPA. Lallemand’s Verdant IPA yeast. LalBrew Verdant IPA yeast will produce fruity esters and is well suited to NEIPA’s. Verdant IPA yeast expresses high amounts of β-lyase enzyme promoting biotransformation accentuating hop flavour and aroma. and also produces high amounts of glycerol producing a beer with a silky mouthfeel.
You could also try Froth Spectra (Assumed Origin: Unknown (London)).Spectra can produce a spectrum of radiant flavour & aroma while exhibiting an elegant ester profile and velvety mouthfeel.
Alternatively you could use Lallemand's New England yeast. Lallemand New England produces beers with a unique fruit forward ester profile, which is sought after in NEIPA's. Through expression of a β-glucosidase enzyme, LalBrew® New England can promote hop biotransformation and accentuate hop flavour and aroma.
Please Note: Kettle finings are not provided with this kit as beer clarity is not required for this style of beer.

A dual purpose / soft bittering hop with a citrus lemon zest character with hints of pine
Breeding:
NZ Southern Cross is a triploid cross between the New Zealand variety Smoothcone and a 1950's research variety bred from a crossing of an early North American type known as the Cali (short for Californian) with the ubiquitous English Fuggle. Released from New Zealand's Hort Research hop breeding programme at Riwaka in 1994.
Selection:
The aroma is characterised by a heady mix of lemon peel and pine needles layered beneath a clean spiciness during selection. NZ Southern Cross has an excellent essential oil profile and low Cohumulone while producing consistent levels of alpha acid.
Brewing:
A kettle variety of the highest order NZ Southern Cross imparts a soft bitterness with a subtle resinous quality. The essential oil component is such that it can deliver a delicate balance of citrus and spice when added at the end of boil or a much bigger punch in the hop back or direct to the fermenter.

Applications:
Alpha Acids and Total Oil matched with low cohumulone find this extraordinary hop several applications, single or multi-purpose to achieve subtle citrusy lager to big fruity driven ales.
NZH-101 is a triploid selection crossed in 2012 through our partnership programme with Plant & Food Research. NZH-101 is derived from a cross between Cascade and a NZ derived tetraploid male with both North American and European ancestry. NZH-101 and the recent released cultivar Superdelic™ are half siblings with a common NZ male tetraploid parent. NZH-101 is a late maturing selection, with a high yield potential and selected for advanced trials based on its outstanding flavour and aroma in pilot brewing, which have demonstrated citrus, tropical and stone fruit characters.

Base Malt
Gladfield’s Vienna Malt is made using a blend of winter and spring barley varieties with a higher nitrogen content. Our germination and kilning results in a sweeter, malty character with a golden to orange colouring that is slightly darker than our Ale Malt.
Vienna Malt imparts hints of toast or biscuit malt aromas and flavours to the finished beer. Due to its light colour, Vienna Malt is very versatile and compliments a wide range of other malts.
Our Vienna Malt has a Kiwi twist but still has the usual characteristics of typical Vienna Malt and is ideal for brewing darker lagers or Märzen style beers. We have found our Vienna Malt combines particularly well with our Gladiator Malt and Toffee Malt, and gives a big white head and a lovely golden colour to make a very drinkable session beer.
Use: Vienna Malt has a sweet malty character and light toast malt flavour. Perfect for brewing a Vienna lager or a Märzen style beer.
