Red Gum Port – Limited Batch Barrel Chunks
There’s a quiet corner of Western Australia where a handful of port barrels are built not from imported oak, but from local red gum — a timber as Australian as the dry earth itself. These casks are rare, used sparingly, and almost never released to the open market. When a tiny allocation becomes available, we grab it. This is one of those moments.
Our Red Gum Port chunks come from that fleeting supply. Once filled with fortified Australian port and left to rest through scorching summers and cool winters, the timber is now cut into home-brew-friendly pieces — ready to hand over every whisper of its past life.
The Scent of the Bush in a Glass
Red gum doesn’t taste or smell like traditional oak. It brings something older, softer, and deeply rooted. From the moment you open the bag, you’ll catch it: a mix of dark fruit leather, sun-baked earth, and a faint prickle of woodsmoke. In spirit, the chunks slowly unravel layers of:

Jammy dark fruits — think dried muscatels, overripe figs, and black cherry compote, gifted by the port-soaked grain.

Burnt toffee and brown sugar crust — a rounded sweetness that cushions the edges of young spirit without masking it.

Where It Belongs
While these chunks play nicely with many spirits, two paths really let them shine:

Whiskies — the robust, cereal-forward character marries effortlessly with the dried-fruit sweetness and earthy depth.

Clean neutral spirit — here the wood takes centre stage, transforming a blank canvas into a complex digestif reminiscent of a fine old tawny.
Don’t be afraid to drop a chunk into a dark rum or a home-brewed strong ale either. Small additions can spark remarkable results.
Guiding the Extraction
Forget rigid rules. Think of this as a rhythm:

Start gentle. Place roughly 100 grams of chunks per litre of spirit into a clean glass vessel. You can always add more later, but you can’t take the flavour back out.

Visit often. Beginning around day three, pour yourself the smallest taste every day or two. Swirl, sniff, sip. Notice how the sharp edges soften and new notes emerge — sometimes a sudden wave of chocolate and prune, other times a quiet leathery calm.

Listen to your liquid. There is no “correct” age here. One batch might hit perfection at 10 days, another at three weeks. The moment it feels round, expressive, and complete to you — stop. Strain or remove the wood.

Rest and enjoy. Let the naked spirit rest for a few days to settle, then bottle. Pour with pride.

Simply add 330ml of Sweet Liqueur Base to 630ml of 40% spirit and the required amount flavouring to create top quality liqueurs.
Makes up to 3 litres.
Replicate the renowned Lincoln County Process used in producing almost all Tennessee whiskeys prior to barrel ageing. This traditional method gently filters new-make spirit through a bed of sugar maple charcoal, removing volatile compounds and softening the spirit before maturation. The result is a smoother, mellower whiskey with enhanced caramel and vanilla notes once aged on oak.
Usage:
Steep 250 g of Pure Distilling Maple Charcoal with 5 L of Bourbon, Whiskey, or ~40% ABV neutral spirit for 4–6 days. After steeping, decant the filtered spirit to a small ageing barrel or transfer directly onto Pure Distilling Bourbon Chunks to continue developing depth, colour, and character.
The mesh pieces supplied in this pack have the specifications of all being 30g +/- 1g, to ensure that the correct packing density is achieved in the column. They have been stretched and manipulated to break short strands to ensure even distribution and compaction in the condenser.

A Pot Condenser is used when you want the flavour of the wash to come through. For instance, if you ferment fruit or grains, it will allow some of that flavour to enter your distillate. If you use a reflux condenser, such as the Pure Distilling Reflux Condenser, you would just end up with pure, unflavoured alcohol. The Pure Distilling Alembic Dome is made from 99.7% copper and is double the weight of competitors! The dome fits on top of your boiler, used in place of the boiler lid.
The Pure Distilling Alembic Dome increases copper contact in the distilling process, capturing more sulphites and resulting in a higher quality product. The dome is designed for use with the Pot Condenser and perfect for pairing with our Proofing Parrot!
Fit boilers with a 310mm-312mm diameter.
The diameter of the hole at the top of the dome is 60mm.
Premium 8 Spirit Yeast is a high-performance yeast designed for consistent, reliable fermentation with excellent alcohol yield and clean results. An excellent all-round spirit yeast, it is best suited to 8 kg sugar or 9 kg dextrose washes where maximum alcohol yield and strong fermentation performance are required. It can also be used with 6 kg sugar or 7 kg dextrose washes for fast fermenting.

Pure Distilling's Premium Spirit Yeast is a very high quality 8kg Turbo yeast that is fast and reliable. Produces a very high yield (up to 10L of spirit) with an extremely clean, smooth flavour
Steps:
1. Clean and sterilise all equipment
2. Prepare 21 L of water at 30C
3. Add 8kg of sugar or 9 kg of Dextrose
4. Stir until dissolved
5. Add Pure Distilling Spirit Enhancer
6. Add Pure Distilling Premium Spirit Yeast and stir again
7. Replace lid and leave for 10 days
8.Measure with a hydrometer
9. If higher than 990, then stir and check again in 2 days. If at at 990 or below, use Pure Distilling Crystal Clear and then distill It can make 10L of high quality Spirit.
For a faster result or if the room temperature is higher than 30C, use 6kg sugar or 7kg dextrose and leave for 3 days.

A special activated carbon that removes impurities as your wash is fermenting. Gives a cleaner tasting, smoother spirit. If you want the premium, smooth taste of master distilled spirits, add Spirit Enhancer to your wash and be amazed at the difference it makes.
Crystal Clear Spirit Wash Clarifier Part A & B
Pure Distilling Crystal Clear wash clarifier removes the yeast cells and other impurities from a fully fermented wash to prevent them contaminating your spirit while distilling.
You should always use a clearing agent. This is the single biggest difference you can make to get a far better product. 66g twin pack.

The Proofing Parrot Kit is all copper construction with a water cooling coil which brings the output spirit temperature to around 20 degrees, allowing for continuous alchometer readings without having to do corrections. Comes with hoses and connectors and a “perch” to mount the Proofing Parrot Kit onto the boiler. If using an extension or Sightglass mount the perch so it rises or sits up from the boiler, if using just the pot or reflux condenser mount the perch the other way round so it follows the line of the boiler lid, see the photos for examples.
Connect water to the Parrot first, then use the supplied hose and fittings to connect to the pot or reflux condenser. Only insert the alcometer once Parrot is full of spirit, and flowing out the spout.

Instructions: The Pure Distilling Reflux Condenser Instructions
Sourced from barrels that have held Genuine Queensland Rum. These Rum barrel chunks will produce top quality Rum. Batch lots will contribute to product variation.
Directions for Use
Soak 100g per litre of spirit as a general guide and adjust to your personal taste.
- First Soaking: add 2.5 litres of spirit to 500g of Pure Distilling Bourbon Chunks and leave to soak for 6 - 8 days. Drain the spirit from the chunks and filter though a paper filter to remove any particles.
- Second Soaking: add a further 2.3 litres of spirit and soak for 10 - 24 days depending on taste. Drain and filter as per first soaking.
- Third Soaking: add a further 2.3 litres of spirit and soak for 5 - 6 weeks depending on taste. Drain and filter as per first soaking. This third soaking can be improved by adding a Kentucky Bourbon Flavouring.
