These recipes have been designed to be brewed on any brewing setup using a water to grist ratio of 3L per kilogram. Each kit contains a detailed recipe and instructions.
The pre-boil kettle volumes are based on a boil off rate of:
- 3.5L per hour for 24L batches.
- 4L per hour for 48L batches.
To ensure the target water profile and mash pH is achieved, brewing salts are included in each kit. During the purchase process, you can select your water source from a dropdown menu of known water sources. If your specific water source is not listed, you can provide a water analysis report, or simply select "Not Listed/Not Required."
If you are able to supply a water analysis report showing the amount of Calcium, Magnesium, Sodium, Chloride, and Sulphate in your brewing water, as well as the alkalinity (as CaCO3) or bicarbonate level, and pH, we will adjust the recipe and provide the required brewing salts specifically for you. Just select "I will supply a water analysis info" in the dropdown box.
If any of the minerals in your brewing water is above 50ppm, or if the Sodium level is over 25ppm, please contact us so we can assess whether your brewing water can be adjusted to the target profile of the beer you plan to brew.
The target water profile is provided for brewers using another source water so that the correct mineral/acid additions can be calculated to achieve the target water profile and mash pH. If using chlorinated water we recommend using an activated carbon filter such as our Beer & Water Filtering System with our 0.5 Micron Carbon Water Filter or campden tablets to remove chlorine and/or chloramine from your brewing water.

Roggenbier translates to “Rye Beer”. It is typically 50% Rye malt giving it a characteristic grainy spicy character, which is completed by the classic weizen yeast tartness, spicy clove phenolics and fruity banana esters. With hints of dark stone fruit and caramel flavours it is great Autumn and Winter wheat beer, but due to its medium dry to dry finish it is drinkable all year round.

Note on Rye Malt
Rye malt contains a high amount of beta glucan, which increases wort viscosity and may slow runoff during lautering and sparging, and potentially cause a stuck sparge.
A mash rest at 40℃, sometimes called a Beta Glucanase rest, can help to break down the beta glucan in the wort and reduce the risk of a stuck sparge.
As added insurance this recipe includes oat hulls in the mash. The oat hulls do not add any fermentables, but improve the filter bed of the mash to reduce the risk of a stuck sparge.

ATF Sabrodaze will leave you in a tropical hoppy daze. Loaded with Sabro (12.5g/L in the boil & approx. 13.6g/L in the dry hop) it has a wonderful tropical fruit aroma with pineapple to the fore and hints coconut in the background with a soft, almost creamy mouthfeel.
Yeast is not included in the kit. We recommend using Froth Vape (Assumed Origin: Boddington’s) to produce a juicy hazy with a silky mouthfeel and great hop aroma and flavour.
Alternatively we recommend using Verdant IPA. Lallemand’s Verdant IPA yeast. LalBrew Verdant IPA yeast will produce fruity esters and is well suited to NEIPA’s. Verdant IPA yeast expresses high amounts of β-lyase enzyme promoting biotransformation accentuating hop flavour and aroma. and also produces high amounts of glycerol producing a beer with a silky mouthfeel.
You could also try Froth Spectra (Assumed Origin: Unknown (London)).Spectra can produce a spectrum of radiant flavour & aroma while exhibiting an elegant ester profile and velvety mouthfeel.
Alternatively you could use Lallemand's New England yeast. Lallemand New England produces beers with a unique fruit forward ester profile, which is sought after in NEIPA's. Through expression of a β-glucosidase enzyme, LalBrew® New England can promote hop biotransformation and accentuate hop flavour and aroma.

The ATF Schwarzbier (black beer) is a light bodied lager beer with a mild roast character. An easy drinking beer with aromas of chocolate of coffee blending with a light noble hop aroma.

The ATF Tangy Fruit is a great refreshing beer bursting with tangy citrus and tropical fruit aromas.
Like wine, this beer uses acidity to balance the malt sweetness instead of bitterness. The acidity has a pleasant citrus quality very similar to fresh lemons/lemonade, which provides the beer with a light body making it refreshing and very drinkable.
The ATF Tangy Fruit's acidity is provided by WildBrew Philly Sour yeast, a unique yeast that primarily produces lactic acid during the initial phase of fermentation before switching over to ethanol production.
Philly Sour takes longer than most yeasts to begin and complete fermentation so it is important to pitch the right amount of yeast. Yeast is not included in the kit.
The ATF Tangyshake NEIPA is the best grown-up milkshake you’ve ever had. A pleasant tangy sourness balanced by a creamy milkshake like sweetness and texture and bursting with citrus and tropical fruits (think tangerine, pink grapefruit, melon, papaya) with hints of creamy coconut. The addition of vanilla rounds out the milkshake experience.
In addition to what is included in the kit you will need one vanilla pod and sufficient vodka in which to soak the vanilla pod. You could use 60ml of pure vanilla extract instead, although the flavour may not be as fresh and bright as the vanilla pod soaked in vodka.

Mango Madness yeast is an innovative and cutting-edge strain selected to revolutionise the brewing process with its unique aromatic profile, thermotolerant properties, and ability to accelerate fermentation. By using Mango Madness yeast, you can achieve faster turnarounds without compromising on the quality and flavour profiles of your hop forward beers.
We recommend fermenting the ATF Tropical Krush with Mango Madness at 35℃ for 3 - 5 days before cooling the beer to 16℃ before adding the second dry hop. When cooling the beer care should be taken to avoid oxidising the beer. Please refer to the ATF Dry Hopping Techniques and How to minimise Oxidation article for some options.
If you are unable to control the fermentation temperature and/or are unable to seal the fermenter to avoid oxidation, we recommend using Froth Vape (Assumed Origin: Boddington’s) to produce a juicy hazy with a silky mouthfeel and great hop aroma and flavour.
Alternatively we recommend using Verdant IPA. Lallemand’s Verdant IPA yeast. LalBrew Verdant IPA yeast will produce fruity esters and is well suited to NEIPA’s. Verdant IPA yeast expresses high amounts of β-lyase enzyme promoting biotransformation accentuating hop flavour and aroma. and also produces high amounts of glycerol producing a beer with a silky mouthfeel.
You could also try Froth Spectra (Assumed Origin: Unknown (London)).Spectra can produce a spectrum of radiant flavour & aroma while exhibiting an elegant ester profile and velvety mouthfeel.
Alternatively you could use Lallemand's New England yeast. Lallemand New England produces beers with a unique fruit forward ester profile, which is sought after in NEIPA's. Through expression of a β-glucosidase enzyme, LalBrew® New England can promote hop biotransformation and accentuate hop flavour and aroma.

The ATF TropiLager has a pleasant tropical pineapple aroma with notes of citrus along with a clean crisp malt aroma. The flavour is clean and crisp with a mild, slightly sweet, tropical fruit character leading to a smooth bitterness and drying finish. A very nice summer beer.

With the aroma of sweet crema brewed from freshly roasted coffee on top of subtle chocolate and nutty dark fruit caramel flavours, the ATF Velveteen Stout is a revelation.
Unlike a traditional dry stout, the ATF Velveteen Stout has no acrid bitterness or astringency from the use of large amounts of traditional dark malts.
It has a full malt backbone and a creamy velvety mouthful with sufficient hop bitterness to ensure it isn’t too sweet and leave you wanting more.

The ATF Vienna Lager is a reddish amber coloured malt forward beer that showcases Vienna malt’s toasty character. It has a full malt flavour with a mild sweetness and dry finish. There is sufficient bitterness to balance the beers malty character and a low amount of earthy grassy noble hop aroma.

The Smoked Bee has a wonderful sweet floral smokey aroma and flavour sitting on top of layers of light toasty, nutty, caramel and toffee aromas and flavours with hints of dark fruits. It has a beautiful deep red brown colour and finishes medium dry.
Don’t let the deep red brown colour fool you. This is a great summer bbq beer.
